    Mini Pizza Meatloaves

    Mini Pizza Meatloaf Recipe Ingredients

    • Ground Beef
    • Plain Breadcrumbs
    • Grated Parmesan Cheese
    • Large Egg
    • Minced Garlic
    • Italian Seasoning
    • Salt
    • Black Pepper
    • Mozzarella Cheese Sticks
    • Pepperoni Slices
    • Pizza Sauce

    Substitution Suggestions

    • Ground Beef: If you want to lighten up the meatloaf you can use ground turkey. It works really well. You can also do a blend of ground beef, ground pork or Italian sausage.
    • Plain Breadcrumbs: Italian breadcrumbs or homemade breadcrumbs are great options.
    • Grated Parmesan Cheese: Asiago, Pecorino or Romano cheeses would all be delicious in the meatloaves.
    • Minced Garlic: You can use a ½ teaspoon of dried minced garlic or garlic powder.
    • Italian Seasoning: Feel free to use your favorite seasonings. Oregano, basil or parsley are delicious options.
    • Pepperoni Slices: Original pepperoni or turkey pepperoni slices will both work. You can also use mini pepperoni.
    • Pizza Sauce: Your favorite jarred pizza sauce will work. Homemade sauce is a great option too.

    This easy meal for pizza meatloaf muffins is a huge hit with the whole family. A fun pizza twist on classic meatloaf! You'll be adding this recipe to your meal plan every week!

    How to Make Mini Pizza Meatloaves

    1. First, heat oven to 375°F and grease a muffin tin well with nonstick cooking spray.
    2. Cut each string cheese stick into 4 pieces and chop the pepperoni slices.
    3. Next, in a large bowl combine the meatloaf ingredients: ground beef, bread crumbs, parmesan cheese, egg, Italian seasoning, minced garlic, salt and black pepper. Mix together until everything is evenly incorporated being careful not to overmix.
    4. Score the meatloaf mixture into 4 portions and then divide each portion in half to make 8 equal portions. Shape the meat into a patty.

    1. Place 1 piece of cheese in the center of the patty and top with a heaping teaspoon of diced pepperoni.
    2. Fold the meat over the cheese and pepperoni and form into a ball.
    3. Place the round loaf in greased muffin cups. Flatten the tops slightly.
    4. Repeat with remaining patties. Set the remaining diced pepperoni aside.
    5. Bake meatloaves in preheated oven for 20 minutes.

    1. Sprinkle the remaining diced pepperoni evenly over top of each loaf and then finish with 1 tablespoon of pizza sauce on each loaf.
    2. Bake for an additional 10 minutes or until the meatloaf as reached an internal temperature of 160°F. A meat thermometer works great!
    3. Let mini meatloaves rest for about 5-10 minutes then serve and enjoy!

    I love serving these little meatloaves with a potato side dish, vegetable and side salad. They are also delicious served with many other side dishes. Here are some yummy ideas:

    Make Ahead Instructions

    Prep the mini pizza meatloaves according to recipe directions. Once the mini loaves are in the pan, cover them tightly with plastic wrap or foil and store in the refrigerator until ready to bake. It is best to let them sit at room temperature for about 15 minutes before baking. If you forget no worries, just increase the baking time by about 5 minutes.

    This recipe also works well for make ahead meal prep dishes. Follow all the recipe directions. Once the loaves are done baking, let them cool completely. Then store them in your meal prep dishes with a healthy side dish and store in fridge.

    Storing Mini Meatloaves

    Storing: Store the mini pizza meatloaves in an airtight container in the fridge for up to 4 days.

    Reheating: Reheat the mini meatloaves in the microwave until warmed through. Or wrap them in foil or place in a covered baking dish and warm through in a low oven.

    Freezing Mini Pizza Meatloaves

    These mini pizza meatloaves can be frozen cooked or uncooked. Place the cooked and cooled meatloaves in a freeze safe air tight container. Label, date and freeze for up to 4 months. Simply thaw in the fridge and then reheat in the microwave or oven.

    If you want to make them for a freezer meal, place the raw mini meatloaves on a sheet pan or in an aluminum foil pan and place them in the freezer for about an hour to flash freeze. Once they are frozen, place in a freezer bag or container and then label and date. Or you can tightly cover the aluminum pan and use that. These will last in the freezer for 3-4 months. When ready to cook, take out the night before and thaw in the fridge. Place mini loaves in a muffin pan or on a sheet pan and follow cooking instructions in recipe. May have to increase cooking time by about 5 minutes or so.

    Heather's Favorite Tools for this Recipe

    • I love these nestled mixing bowls for mixing and prepping ingredients.
    • I love simple tools that can be used for various things. I use the box grater for freshly grated Parmesan cheese as well as many other things.
    • A garlic press works great if you want to use fresh garlic and not have to chop it. I use a Pampered Chef one but this garlic press from OXO is a great one too!
    • Long ago, I used to be a Pampered Chef consultant and I still prefer their baking tools and pans to any others. Their muffin pans and loaf pans are the ones I prefer. Find yourself a consultant, host a party and treat yourself to something new. I also like the Food Network muffin pans and baking pans. You can order them online.
    • An instant-read thermometer is ideal for checking the temperature of the meatloaf. I use the Pampered Chef one but this instant read thermometer from OXO is great too!

    Tips for Easy Mini Pizza Meatloaves

    • Spray the muffin pan well with nonstick cooking spray. The last thing you want is your meatloaves stuck in the pan!
    • Use a leaner ground beef. Too much fat will pool at the bottom of the pan.
    • The most important rule about making any type of meatloaf is to not over work or over mix the meat mixture. Over working the meat will create really tough and dry meatloaf.

    Mini Pizza Meatloaves

    • 12 cup muffin pan

    Ingredients

    • 1¼ pounds ground beef
    • ½ cup bread crumbs
    • ½ cup grated parmesan cheese
    • 1 large egg
    • 1 teaspoon minced garlic
    • 1 teaspoon Italian seasoning
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 2 mozzarella cheese sticks, each cut into 4
    • 30 pepperoni slices, diced small
    • ½ cup pizza sauce

    Instructions

    • Preheat oven to 375°F and grease a muffin pan well with nonstick cooking spray.
    • In a large bowl combine: ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, Italian seasoning, salt and black pepper. Mix together until everything is evenly incorporated being careful not to overmix.
    • Score the meat into 4 portions and then divide each portion in half to make 8 equal portions. Shape the meat into a patty.
    • Place 1 piece of cheese in the center of the patty and top with a heaping teaspoon of diced pepperoni.
    • Fold the meat over the cheese and pepperoni and form into a ball.
    • Place the round loaf in prepared muffin pan and lightly flatten the top.
    • Repeat with remaining patties. Set remaining diced pepperoni aside.
    • Bake meatloaves in preheated oven for 20 minutes.
    • Sprinkle the remaining diced pepperoni evenly over the meatloaves and top each loaf with 1 tablespoon of pizza sauce.
    • Bake for an additional 10 minutes or until the meatloaf as reached an internal temperature of 160°F.
    • Let mini meatloaves rest for about 5-10 minutes then serve and enjoy!
