    Bacon Cheeseburger Meatloaf

    This Bacon Cheeseburger Meatloaf is an easy homemade dinner that is the perfect mashup of a classic cheeseburger and hearty meatloaf. Loaded with shredded cheese and wrapped in crispy bacon, this family favorite is a fun twist on two comfort food dinners everyone already loves.

    Bacon Cheeseburger Meatloaf Recipe Ingredients

    • Ground Beef
    • Panko Bread Crumbs
    • Shredded Cheddar Cheese
    • Large Eggs
    • Dried Onion Flakes
    • Dried Minced Garlic
    • Worcestershire Sauce
    • Dried Parsley
    • Salt
    • Black Pepper
    • Bacon Slices

    Substitution Suggestions

    • Ground Beef: I like to use a leaner cut of ground beef so it doesn't get too greasy with the bacon. However, you can use 80/20 beef. I have only made this recipe with beef but I think if you used ground turkey it would work well.
    • Panko Bread Crumbs: I like the texture the panko gives the meatloaf, but you can use traditional bread crumbs or even crushed butter crackers or saltine crackers.
    • Shredded Cheddar Cheese: I love the sharpness of cheddar cheese in this recipe. You can use your favorite cheese though! Monterey jack, pepper jack, colby jack, swiss, gouda, are all delicious options.
    • Onion and Garlic: If you prefer you can use 2 teaspoons of onion powder and 1 teaspoon of garlic powder. Or you can finely mince a half of a small onion and 2 garlic cloves.

    How to Make Bacon Wrapped Meatloaf

    1. First, preheat oven to 350°F and line a sheet pan or baking dish with aluminum foil or parchment paper.
    2. Next, in a large mixing bowl combine: ground beef, bread crumbs, shredded cheese, eggs, dried onion, dried garlic, Worcestershire sauce, dried parsley, salt and black pepper.
    3. Mix with your hands or a spatula just until everything is incorporated evenly being careful not to overmix.

    1. Place meat mixture on prepared baking sheet and shape into an approximate 9x5 inch loaf.
    2. Now cut 2 slices of bacon in half and cover the ends of the meatloaf.
    3. Use the remaining slices of bacon to cover the meatloaf and tucking the ends underneath the loaf.

    1. Bake in center of oven for 75-90 minutes or until the internal temperature reaches 160°F.
    2. Let meatloaf rest for 10 minutes, then slice and serve!

    What to Serve with Bacon Cheeseburger Meatloaf

    • My family always loves potatoes with meatloaf! These Loaded Mashed Potatoes and Crispy Oven Fries are two family favorites that pair perfectly with this recipe.
    • Add a veggie side with a simple green salad or these Roasted Brussels Sprouts or Roasted Broccoli and Cauliflower.
    • Complete the meal with a batch of yummy Garlic Cheese Biscuits or Easy Dinner Rolls.

    Storing Bacon Wrapped Meatloaf

    Storing: Store any leftovers in an airtight container in the fridge for up to 4 days.

    Reheating: Reheat meatloaf in the microwave or in a low oven covered with foil until warmed through.

    Freezing: This meatloaf freezes well. Double the recipe and freeze the extra loaf. Freeze it raw or cooked. Both work well. Wrap the bacon cheeseburger meatloaf in plastic wrap and then put in freezer safe container or zip top bag. Label, date and freeze.

    Thawing: Let it thaw overnight and bake raw meatloaf as recipe states. Warm thawed and cooked bacon wrapped meatloaf in microwave or in a low oven covered with aluminum foil until warmed through.

    Heather's Favorite Tools for this Recipe

    • These nestled bowls are great for prepping ingredients and mixing the meatloaf.
    • An instant-read thermometer is ideal for checking the temperature of the meatloaf. I use the Pampered Chef one but this instant read thermometer from OXO is great too!
    • These aluminum sheet pans from Nordic Ware are a great option and I also love these Pyrex baking dishes and CorningWare baking dishes.

    Tips for Bacon Cheeseburger Meatloaf

    • Don't overwork the meat while mixing. Mix gently, folding with your fingers just until it's all evenly incorporated.
    • Bake the meatloaf on a sheet pan or in a baking dish to allow the bacon to crisp.
    • If you prefer a traditional meatloaf glaze, mix together ¼ cup ketchup and 1 tablespoon brown sugar or maple syrup. Spread it over the bacon during the last 15 minutes of baking.
    • For best results, check the meatloaf for doneness with a meat thermometer. It would be a tragedy to cut into a raw meatloaf or a hard dried out piece of meat. The meatloaf is done when it reaches an internal temperature of 160°F.
    • Let the meatloaf rest for at least 10 minutes so all the juices can redistribute. This is essential so the meatloaf is juicy and not dry. Do NOT skip this!

    • 2 pounds ground beef
