    Crock Pot Meatloaf and Potatoes

    Crock Pot Meatloaf and Potatoes is my kind of easy comfort dinner that practically cooks itself. This homemade, family friendly meal brings tender slices of meatloaf and hearty potatoes together in one cozy slow cooker recipe. It is simple, satisfying, and always a hit at my table.

    Meatloaf and Potatoes Recipe Ingredients

    • Ground Beef
    • Breadcrumbs
    • Grated Parmesan Cheese
    • Large Egg
    • Worcestershire Sauce
    • Minced Garlic, dried
    • Minced Onion, dried
    • Dried Parsley
    • Salt
    • Black Pepper
    • Ketchup
    • Brown Sugar
    • Russet Potatoes
    • Olive Oil

    Substitution Suggestions

    • Ground Beef: I like to use a lean ground beef like 90/10 for this recipe. Anything fattier will leave a pool of grease in the crock pot. I only tried this recipe with ground beef, however I think you could use ground turkey or a blend of ground beef and ground pork.
    • Breadcrumbs: I like using plain breadcrumbs, but seasoned breadcrumbs or panko crumbs will work too.
    • Grated Parmesan Cheese: I like to use freshly grated parmesan cheese, but you could use the stuff in the green can too.
    • Dried Seasonings: Feel free to use fresh minced garlic and onion if you prefer. I like using the dried stuff because it makes prep time a lot faster and easier.
    • Russet Potatoes: These potatoes hold up well in the crock pot for a baked potato feel. However, you can use any potato you like best.

    How to Make Meatloaf and Potatoes in Crock Pot

    1. First, make the meatloaf. In a large mixing bowl combine: ground beef, breadcrumbs, Parmesan cheese, egg, Worcestershire sauce, garlic, onion, parsley, salt and black pepper. Mix together until everything is evenly combined.
    2. Shape into a loaf that will fit in your slow cooker. Mine is roughly around 8x4. Place loaf in center of crock pot.

    1. In a small bowl combine ketchup and brown sugar. Spread over top of the meatloaf.
    2. Next scrub, wash and dry your potatoes. If you want you can pierce them a few times with a fork, but it's not necessary.

    1. Cut 4 pieces of aluminum foil. Place one potato on one piece of foil, drizzle with about ½ teaspoon of oil, sprinkle with some salt and roll up in the foil. Repeat with remaining potatoes.
    2. Place potatoes around meatloaf in crock pot.

    1. Cover crock pot and cook on low heat for 6 hours.
    2. Serve and enjoy!

    Variations

    Place the meatloaf in an aluminum foil boat and place cut potatoes around it with a few pats of butter and sprinkled with some garlic powder, salt and black pepper. My family really loves baked potatoes so we usually opt for them, but this way was delicious too!

    You can add some more veggies to the crock pot too! Cut some carrots into big chunks and add them under the potatoes. Frozen green beans are another great veggie to add with the potatoes. They both hold up well in the crock pot.

    Serving Meatloaf and Potatoes

    This is a hearty meal on its own but I usually serve it with another veggie or side salad. We really like Air Fryer Green Beans or Roasted Broccoli and Cauliflower with this meal.

    Don't forget all the toppings for those yummy baked potatoes! Here are some of our favorites:

    • Sour Cream, Plain Greek Yogurt or if you're up north: Top the Tator
    • Shredded Cheese
    • Cooked and Crumbled Bacon
    • Sliced Green Onions or Chives

    Storing Meatloaf and Potatoes

    Storing: Store any leftovers in an airtight container in the fridge for up to 4 days.

    Reheating: Reheat leftovers in the microwave or wrapped in foil in a low oven until warmed through. You can also heat them in a skillet over medium-low heat on the stove.

    Heather's Favorite Tools for this Recipe

    • I love my crock pot that is programmable. It allows me to leave the house knowing that dinner won't be overcooked.
    • These nestled bowls are great for prepping ingredients and mixing the meatloaf.
    • A simple box grater works great for grating the Parmesan Cheese.
    • I love an instant-read thermometer for checking the internal temperature quickly. I use the Pampered Chef one but this instant read thermometer from OXO is great too!

    Tips for Crock Pot Meatloaf and Potatoes

    • Use at least a 6 quart Crock Pot. This way there will be enough room for everything.
    • I like to use crock pot liners for super easy clean up!
    • Don't overmix the meatloaf, it can become tough. Mix it just until everything is combined well.
    • Prepare the meatloaf and potatoes the night before so all you have to do is add them to the crock pot, set it and forget it!
    • If you're worried about cooking the meatloaf all the way through, stick a meat thermometer in the center. It should read at least 160°F.

    Crock Pot Meatloaf and Potatoes

    • Crock Pot or Slow Cooker at least 6 quart in size

    Ingredients

    • 1¼ pounds ground beef
    • ½ cup breadcrumbs
    • ¼ cup parmesan cheese, grated
    • 1 large egg
    • 1 tablespoon worcestershire sauce
    • 1 teaspoon dried minced garlic
    • 2 teaspoons dried minced onion
    • ½ teaspoon dried parsley
    • 1 teaspoon salt
    • ½ teaspoon black pepper
