    Crock Pot Chicken and Stuffing

    This Crock Pot Chicken and Stuffing is an easy, family friendly dinner that brings everyone to the table. Tender chicken breasts cook low and slow with homemade gravy, green beans, and stuffing for a full meal right in one pot. A comforting no fuss recipe.

    I have been cooking meals like this for years at home, so I know what makes a crock pot recipe truly work. This one has been tested and tweaked until the flavors are just right and the texture turns out perfectly every time. My family has happily taste tested every version, and it is now one of our go to comfort dinners. Recipes like this are exactly what I love sharing because they are practical, reliable, and made for real life.

    Crockpot Chicken and Stuffing Recipe Ingredients

    • Chicken Breasts, skinless and boneless
    • Olive Oil
    • Frozen Green Beans
    • Stuffing Mix
    • Salted Butter
    • Unbleached All Purpose Flour
    • Poultry Seasoning
    • Salt
    • Black Pepper
    • Chicken Broth
    • Milk

    Substitution Suggestions

    • Chicken Breasts: You could use boneless, skinless chicken thighs too!
    • Olive Oil: Any neutral oil will work. Avocado oil, canola oil or vegetable oil or all fine options.
    • Frozen Green Beans: You can use any frozen veggie you like.
    • Stuffing Mix: Any flavor of stuffing mix will work. Chicken, turkey or even cornbread are all yummy options.
    • Salted Butter: Feel free to use unsalted butter and just taste the gravy before you add it to the crock pot incase it needs a little more seasoning.
    • All Purpose Flour: White whole wheat or whole wheat flour can be used.
    • Poultry Seasoning: This adds so much flavor to the gravy. You can use your own chicken flavoring or spice blend if you like.
    • Chicken Broth: If in a pinch, you could use water but the gravy won't be as flavorful. If using water add a little chicken bullion to it, if you can.
    • Milk: Use whichever type of milk you drink. I use 2% cows milk.

    How to Make Crock Pot Chicken and Stuffing with Green Beans

    1. First, in a large skillet heat olive oil over medium-high heat. Add the chicken breasts and season with a little salt and black pepper.
    2. Sear the chicken breasts for 1-2 minutes per side until they are golden brown.
    3. Place the chicken breasts in the bottom of the slow cooker.

    1. Top the chicken breasts with frozen green beans.
    2. Next, in a large mixing bowl combine the stuffing mix with melted butter and chicken broth. Set aside.

    1. Now, in the same skillet melt the butter over medium heat.
    2. Then sprinkle all purpose flour, poultry seasoning, salt and black pepper over the melted butter and whisk together. Let cook for 1 minute.
    3. Slowly add the chicken broth while whisking, followed by the milk.
    4. Heat to a low boil and until thickened, whisking often, about 2-3 minutes. The gravy should coat the back of a spoon.

    1. Pour the gravy over the chicken and green beans.
    2. Drop scoops of stuffing mix over everything in the crock pot and spread it out evenly.

    1. Cover with lid and set on low heat for 6 hours.
    2. Serve and enjoy!

    Serving Crock Pot Chicken and Stuffing

    This is a complete meal on its own, but sometimes I love pairing it with some mashed potatoes, a simple side salad, a slice of bread or dinner roll. Here are some of my favorite bread and dinner roll recipes that taste delicious alongside this dish:

    Variations:

    • Add a cup of shredded cheese on top of the stuffing. Co-jack or Cheddar are delicious options.
    • For a little sweetness add a ¼ cup of dried cranberries with the stuffing mix.

    Storing Crock Pot Chicken Stuffing and Green Beans

    Storing: Store any leftovers in an airtight container in the fridge for up to 4 days.

    Reheating: Reheat leftovers in the microwave until warmed through. Or you can reheat covered in a low oven until warmed through.

    Heather's Favorite Tools for this Recipe

    • I prefer to use a cast iron skillet to sear the chicken.
    • I love my crock pot that is programmable. It allows me to leave the house knowing the chicken won't be overcooked.
    • These nestled bowls are great for prepping ingredients and mixing the stuffing!
    • A simple box grater is the best for shredding your own cheese.

    Tips for Crock Pot Chicken and Stuffing

    • Searing the chicken is not mandatory, it just creates another level of flavor. In a pinch you can skip it.
    • Save time in the morning and prep the entire meal the night before! Place it all in the crock pot liner, then in the fridge overnight and cook it in the morning.
    • If you add cheese, shred it yourself so it melts as it should.
