In a large skillet heat the olive oil over medium-high heat. Add the chicken breasts and season with a little salt and black pepper.
Sear the chicken breasts for 1-2 minutes per side until they are golden brown. Place the chicken breasts in the bottom of the slow cooker.
Top the chicken breasts with frozen green beans.
In a large mixing bowl combine the stuffing mix with melted butter and chicken broth. Set aside.
In the same skillet melt the butter over medium heat.
Then sprinkle all purpose flour, poultry seasoning, salt and black pepper over melted butter and whisk together. Let cook for 1 minute.
Slowly add the chicken broth while whisking, followed by the milk.
Heat to a low boil and until thickened, about 2-3 minutes, whisking often. Gravy should coat the back of a spoon.
Pour the gravy over the chicken and green beans.
Drop scoops of stuffing mix over everything in the crock pot and spread out evenly.
Cover with lid and set on low heat for 6 hours.
Serve and enjoy!
