Crock Pot Chicken and Stuffing

Crock Pot Chicken and Stuffing is an easy, family friendly dinner with tender chicken cooked in a homemade gravy with green beans and stuffing. A fuss free meal perfect for busy days when you want a comforting dinner ready to go.

Ingredients

  • pounds chicken breast, boneless and skinless
  • 2 tablespoons olive oil
  • 12 ounces frozen green beans
  • 6 ounces box stuffing mix
  • ¼ cup salted butter, melted
  • ½ cup chicken broth

Gravy

Instructions

  • In a large skillet heat the olive oil over medium-high heat. Add the chicken breasts and season with a little salt and black pepper.
  • Sear the chicken breasts for 1-2 minutes per side until they are golden brown. Place the chicken breasts in the bottom of the slow cooker.
  • Top the chicken breasts with frozen green beans.
  • In a large mixing bowl combine the stuffing mix with melted butter and chicken broth. Set aside.
  • In the same skillet melt the butter over medium heat.
  • Then sprinkle all purpose flour, poultry seasoning, salt and black pepper over melted butter and whisk together. Let cook for 1 minute.
  • Slowly add the chicken broth while whisking, followed by the milk.
  • Heat to a low boil and until thickened, about 2-3 minutes, whisking often. Gravy should coat the back of a spoon.
  • Pour the gravy over the chicken and green beans.
  • Drop scoops of stuffing mix over everything in the crock pot and spread out evenly.
  • Cover with lid and set on low heat for 6 hours.
  • Serve and enjoy!
