Crock Pot Meatloaf and Potatoes is an easy, homemade comfort food dinner the whole family will look forward to. Tender, flavorful meatloaf cooks alongside hearty potatoes for a complete meal with minimal prep.
In a large mixing bowl combine: ground beef, breadcrumbs, Parmesan cheese, egg, Worcestershire sauce, garlic, onion, parsley, salt and black pepper. Mix together until everything is evenly combined.
Shape into a loaf that will fit in your slow cooker. Mine is roughly around 8x4. Place loaf in center of crock pot.
In a small bowl combine ketchup and brown sugar. Spread over top of the meatloaf.
Scrub, wash and dry your potatoes. If you want you can pierce them a few times with a fork, but it's not necessary.
Cut 4 pieces of aluminum foil. Place one potato on one piece of foil, drizzle with about ½ teaspoon of olive oil, sprinkle with some salt and roll up in the foil. Repeat with remaining potatoes.
