Crock Pot Meatloaf and Potatoes

Crock Pot Meatloaf and Potatoes is an easy, homemade comfort food dinner the whole family will look forward to. Tender, flavorful meatloaf cooks alongside hearty potatoes for a complete meal with minimal prep.

  • In a large mixing bowl combine: ground beef, breadcrumbs, Parmesan cheese, egg, Worcestershire sauce, garlic, onion, parsley, salt and black pepper. Mix together until everything is evenly combined.
  • Shape into a loaf that will fit in your slow cooker. Mine is roughly around 8x4. Place loaf in center of crock pot.
  • In a small bowl combine ketchup and brown sugar. Spread over top of the meatloaf.
  • Scrub, wash and dry your potatoes. If you want you can pierce them a few times with a fork, but it's not necessary.
  • Cut 4 pieces of aluminum foil. Place one potato on one piece of foil, drizzle with about ½ teaspoon of olive oil, sprinkle with some salt and roll up in the foil. Repeat with remaining potatoes.
  • Place potatoes around meatloaf in crock pot.
  • Cover crock pot and cook on low heat for 6 hours.
