This Easy Cheeseburger Soup Recipe is filled with ground beef, shredded carrots, and classic American Cheese. All the flavors of a juicy cheeseburger in this scrumptious soup recipe!
This soup isn't just easy, it's a fast recipe to make and is on the dinner table in under 30 minutes! Making it a perfect weeknight dinner option. A great twist on an American meal and is just as delicious!

Ingredients for Easy Cheeseburger Soup Recipe
- Ground Beef
- Onion
- Celery
- Carrot
- Salted Butter
- Unbleached All Purpose Flour
- Chicken Broth
- Salt
- Black Pepper
- Dried Parsley
- Whole Milk
- Sliced American Cheese
Substitution Suggestions:
- Ground Beef: Ground turkey is a good and delicious substitute for the beef.
- Salted Butter: Unsalted butter can be used, add an extra ¼ teaspoon salt to the seasoning.
- Unbleached All Purpose Flour: Whole wheat flour and white whole wheat flour can be substituted.
- Chicken Broth: Beef broth, vegetable broth, beef or chicken bouillon mixed with water, or just water can be substituted.
- Whole Milk: I prefer to use whole milk, but any unsweetened milk can be used along with half and half or for an even richer soup you can use heavy whipping cream.
- Sliced American Cheese: I like how the sliced cheese melts fast and easy. Chunks of American cheese, aka Velveeta, can be used. If you prefer a different cheese, shredded cheddar or co-jack is delicious too. Shred your own cheese, it will help melt easier and create a creamy soup.
How to Make Easy Cheeseburger Soup
- In a large dutch oven or soup pot, brown the ground beef over medium heat until no longer pink. Drain and discard any grease.
- To the cooked beef, add the diced onions, celery and salted butter. Cook over medium heat until the onions are translucent and soft.
- Now, add the shredded carrot and stir it in well.
- Next, mix in the flour and let it cook for a minute.
- While stirring, add the chicken broth slowly.
- Stir in the salt, black pepper, and parsley.
- Now, stir in the milk and bring the soup to a low boil.
- Reduce heat to low and add the cheese slices a few at a time. Stir the cheese slices until completely melted before adding more.
- Serve with some of your favorite cheeseburger fixings: crumbled cooked bacon, diced pickles, croutons, or for a little kick some red pepper flakes or pickled jalapeños.
How to Store Cheeseburger Soup
Storing: Store any leftover cooled soup in an air tight container in the fridge. Soup will keep for 3-4 days in the fridge.
Freezing: This soup freezes well! Place the cooled soup in freezer safe air tight containers or zip top bags, label, date and freeze. I like to use freezer bags and freeze the bags flat to help save on freezer space.
Thawing: thaw the soup overnight in the fridge.
Reheating: Heat soup on stove over low heat, or in the microwave until heated through.
What to Serve with Easy Cheeseburger Soup
I love to serve this soup with some cooked crumbled bacon, chopped pickles and croutons for some crunch.

- ½ cup unbleached all purpose flour
- 4 cups chicken broth
- 1 teaspoon salt

- 2 cups whole milk
- 16 oz American cheese slices
