Substitution Suggestions
- Chicken Breasts: You can use boneless skinless chicken thighs too! They are just as yummy in this recipe. Boneless and skinless is ideal so it cooks quicker.
- Olive Oil: Any type of neutral oil will work. Avocado oil, canola oil, or grapeseed oil are all good options.
- Spicy Brown Mustard: Substitute with any good Dijon mustard you prefer. You could use yellow mustard. I never tried it, but I would think it would still be good. I'm picky about mustard because it is not my favorite ingredient, but I really like spicy brown mustard in this sauce recipe. You could also use half Dijon mustard and half whole grain mustard for more texture.
- Lemon Juice: Fresh is best, but bottled will work. Bottled lemon juice tends to be a bit more acidic but the honey in this recipe will help cut the acidity. No lemon juice, no problem! You can substitute with apple cider vinegar, red wine vinegar or white vinegar.
- Italian Seasoning: Feel free to use the seasonings you like best. Rosemary, thyme, parsley, basil or oregano are all great options.

How to Make Honey Mustard Chicken
- First, preheat oven to 375°F and lightly grease a 2 quart baking dish or 9x13 baking dish.
- In a medium bowl combine the sauce ingredients: spicy brown mustard, honey, minced garlic, lemon juice, Italian seasoning, salt and black pepper. Whisk together until everything is fully incorporated.
- Next, trim the chicken if needed and pound them to all the same thickness. The chicken should be no thicker than an inch.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breast and sear each side for 2 minutes until they are a light golden brown.
- Next, place the seared chicken breasts in prepared baking dish.
- Spoon or pour the honey mustard mixture over the chicken. Turn the chicken to coat both sides.
- Cover the baking dish with aluminum foil and bake in preheated oven for 20 minutes.
- After 20 minutes, remove foil cover and bake another 15-20 minutes or until the internal temperature has reached 160°F when a meat thermometer is inserted in the thickest part of the chicken.
- Let chicken rest for 10 minutes before serving.

Tips For Easy Honey Mustard Chicken
- Make sure all chicken is the same size so it is all finished cooking at the same time. If some chicken is thicker than others, it will need more cooking time and then the thinner pieces will end up over cooked and dry.
- Use an instant read thermometer so you don't overcook your chicken. Cook chicken until the thickest part reaches 160°F.
- Let the chicken rest. This is extremely important! It needs time to rest so the juices can redistribute throughout the chicken. If you cut into it right away, all the juices will come flooding out and you will be left with dry chicken.
