This Honey Mustard Chicken is an easy dinner recipe that makes juicy chicken coated in a sweet and tangy sauce. Super simple supper that is great any day of the week.
Preheat oven to 375°F and lightly grease a 2 quart baking dish or 9x13 baking dish.
In a medium bowl combine the sauce ingredients: spicy brown mustard, honey, minced garlic, lemon juice, Italian seasoning, salt and black pepper. Whisk together until everything is fully incorporated.
Trim the chicken if needed and pound them to all the same thickness. The chicken should be no thicker than an inch. Season chicken with some salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breast and sear each side for 2 minutes until they are a light golden brown.
Place the seared chicken breasts in prepared baking dish or use oven safe skillet.
Spoon or pour the honey mustard sauce over the chicken. Turn the chicken to coat both sides.
Cover the baking dish with aluminum foil and bake for 20 minutes.
After 20 minutes, remove foil cover and bake another 15-20 minutes or until the internal temperature has reached 160°F when inserted in the thickest part of the chicken.
