This recipe for Mini Pizza Meatloaves has all the flavors of pizza but in meatloaf form. Baked in a muffin pan makes this recipe quick and easy to enjoy any day of the week.
Preheat oven to 375°F and grease a muffin pan well with nonstick cooking spray.
In a large bowl combine: ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, Italian seasoning, salt and black pepper. Mix together until everything is evenly incorporated being careful not to overmix.
Score the meat into 4 portions and then divide each portion in half to make 8 equal portions. Shape the meat into a patty.
Place 1 piece of cheese in the center of the patty and top with a heaping teaspoon of diced pepperoni.
Fold the meat over the cheese and pepperoni and form into a ball.
Place the round loaf in prepared muffin pan and lightly flatten the top.
Repeat with remaining patties. Set remaining diced pepperoni aside.
Bake meatloaves in preheated oven for 20 minutes.
Sprinkle the remaining diced pepperoni evenly over the meatloaves and top each loaf with 1 tablespoon of pizza sauce.
Bake for an additional 10 minutes or until the meatloaf as reached an internal temperature of 160°F.
Let mini meatloaves rest for about 5-10 minutes then serve and enjoy!
