- Cream Cheese: If you want you can use Neufchâtel cheese. The dip won't be quite as rich, but it will still be delicious.
- Sour Cream: Plain Greek yogurt is a good substitute.
- Mayonnaise: If you prefer to use Miracle Whip that is a good option. The dip will be a bit tangy and not quite as rich, but just as equally yummy!
- White Pepper: If you can't find white pepper or don't want to buy it, you can use black pepper. I just really like the flavor of white pepper with cream cheese.
- Tomatoes with Green Chilies: If you want to omit the spice, just use petite diced tomatoes. If you can't find a can of tomatoes with chilies (Rotel tomatoes) you can use a can of petite diced tomatoes and a small can of green chilies, both drained.
- Southwest Corn or Mexicorn: This corn adds the best flavor to the dip! It can be hard to find sometimes, at least where I live. If you can't find it, you can use plain canned corn or thawed frozen corn with chopped roasted red peppers from a jar or chopped fresh bell peppers.
- Cilantro: If you are not a fan of cilantro, feel free to use parsley instead.
- Sharp Cheddar Cheese: Mild cheddar, Co-Jack, Pepper Jack, or Monterey Jack cheeses are all good substitutes.
- Variations: If you want a little bit more spice, add a chopped jalapeno pepper or a pinch of cayenne pepper. For more of a bite add some chopped red onion.

- First in a large bowl whip, beat or stir the room temperature cream cheese so it is soft and creamy and no longer lumpy. I like to use the stand mixer with the paddle attachment, but you can use a hand mixer or just a wooden spoon or spatula.
- Once the cream cheese is soft and creamy, stir in the mayo, sour cream and lime juice until fully combined.
- Next add the spices and mix until incorporated evenly.
- Then stir in the drained tomatoes with green chilies and southwest corn.
- Now fold in the chopped cilantro and shredded sharp cheddar cheese until completely combined.
- Chill the dip covered until ready to serve.
