    This Easy Corn Dip is the perfect appetizer or party dip! Super simple to whip up and a big crowd pleaser. This creamy corn dip is absolutely irresistable!

    Easy Corn Dip Recipe Ingredients

    • Cream Cheese
    • Sour Cream
    • Mayonnaise
    • Lime
    • Salt
    • Cumin
    • Garlic Powder
    • White Pepper
    • Tomatoes with Green Chilies
    • Southwest Corn
    • Fresh Cilantro
    • Sharp Cheddar Cheese

    Substitution Suggestions

    • Cream Cheese: If you want you can use Neufchâtel cheese. The dip won't be quite as rich, but it will still be delicious.
    • Sour Cream: Plain Greek yogurt is a good substitute.
    • Mayonnaise: If you prefer to use Miracle Whip that is a good option. The dip will be a bit tangy and not quite as rich, but just as equally yummy!
    • White Pepper: If you can't find white pepper or don't want to buy it, you can use black pepper. I just really like the flavor of white pepper with cream cheese.
    • Tomatoes with Green Chilies: If you want to omit the spice, just use petite diced tomatoes. If you can't find a can of tomatoes with chilies (Rotel tomatoes) you can use a can of petite diced tomatoes and a small can of green chilies, both drained.
    • Southwest Corn or Mexicorn: This corn adds the best flavor to the dip! It can be hard to find sometimes, at least where I live. If you can't find it, you can use plain canned corn or thawed frozen corn with chopped roasted red peppers from a jar or chopped fresh bell peppers.
    • Cilantro: If you are not a fan of cilantro, feel free to use parsley instead.
    • Sharp Cheddar Cheese: Mild cheddar, Co-Jack, Pepper Jack, or Monterey Jack cheeses are all good substitutes.
    • Variations: ​If you want a little bit more spice, add a chopped jalapeno pepper or a pinch of cayenne pepper. For more of a bite add some chopped red onion.

    How to Make Corn Dip with Cream Cheese

    1. First in a large bowl whip, beat or stir the room temperature cream cheese so it is soft and creamy and no longer lumpy. I like to use the stand mixer with the paddle attachment, but you can use a hand mixer or just a wooden spoon or spatula.
    2. Once the cream cheese is soft and creamy, stir in the mayo, sour cream and lime juice until fully combined.
    3. Next add the spices and mix until incorporated evenly.

    1. Then stir in the drained tomatoes with green chilies and southwest corn.
    2. Now fold in the chopped cilantro and shredded sharp cheddar cheese until completely combined.
    3. Chill the dip covered until ready to serve.

    What to Serve with Corn Dip

    This easy corn dip is delicious as a spread or party dip. Here are some yummy ideas of what to serve with it:

    • Corn Chips
    • Tortilla Chips
    • Pretzels
    • Bagel Chips
    • Variety of Crackers
    • Veggies: Carrots, Celery Sticks or Cucumbers
    • Roasted Potatoes
    • Baked Potatoes: so good on top!

    Storing Southwestern Corn Dip

    Storing: Store the dip in an airtight container in the fridge for up to 5 days.

    Serving: This is a cold dip so it needs to stay cool. To prevent any bacteria from growing, the dip can only sit out at room temperature for 2 hours. To help keep it cool while you serve it, place the bowl of dip inside a larger bowl with some ice in it. The ice will keep the salad cool allowing you to leave it out longer if needed.

    Tips for Easy Corn Dip Recipe

    • Start with room temperature ingredients. This way the cream cheese will blend smoother with the sour cream and mayo and won't create any lumps in the dip.
    • Make sure everything is drained really well. You don't want a runny dip.
    • Shred your own cheese that way you won't get any gritty texture from the additives in pre-shredded cheese.
    • This dip can be made a day or two ahead of time, just give it a good stir before serving.

    What can I serve with corn dip besides chips?

    Corn chips and tortilla chips are a typical choice for this dip, but there are so many other options. Veggies like celery, carrots and cucumbers are delicious. Different types of chips like bbq potato chips, pretzels and bagel chips are yummy too. It is absolutely delicious as a topper on baked potatoes or a dipper for roasted potatoes.

    Can I freeze corn dip?

    I don't recommend freezing this corn dip. The texture won't hold up once thawed. It's best eaten fresh or a day or two after making it.

    Ingredients

    • 16 oz cream cheese, softened to room temperature
    • ½ cup sour cream
    • ½ cup mayonaisse
    • 1 lime, juiced
    • 1 teaspoon salt
    • ¾ teaspoon cumin
    • ½ teaspoon garlic powder
    • ½ teaspoon white pepper
    • 30 oz southwest corn, drained
    • 15 oz tomatoes with green chilies, drained
    • ¼ cup chopped cilantro
    • 2 cups shredded sharp cheddar cheese
