This Easy Corn Dip is the perfect appetizer or party dip! Super simple to whip up and a big crowd pleaser. This creamy corn dip is absolutely irresistable!
First whip, beat or stir the room temperature cream cheese so it is soft and creamy and no longer lumpy. I like to use the stand mixer with the paddle attachment, but you can use a hand mixer or just a wooden spoon or spatula.
Once the cream cheese is soft and creamy, stir in the mayo, sour cream and lime juice until fully combined.
Next add the salt, cumin, garlic powder, and white pepper and mix until incorporated evenly.
Then stir in the drained tomatoes with green chilies and southwest corn.
Now fold in the chopped cilantro and shredded sharp cheddar cheese until completely combined.
