Easy Corn Dip

This Easy Corn Dip is the perfect appetizer or party dip! Super simple to whip up and a big crowd pleaser. This creamy corn dip is absolutely irresistable!

Ingredients

  • 16 oz cream cheese, softened to room temperature
  • ½ cup sour cream
  • ½ cup mayonaisse
  • 1 lime, juiced
  • 1 teaspoon salt
  • ¾ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon white pepper
  • 30 oz southwest corn, drained
  • 15 oz tomatoes with green chilies, drained
  • ¼ cup chopped cilantro
  • 2 cups shredded sharp cheddar cheese

Instructions

  • First whip, beat or stir the room temperature cream cheese so it is soft and creamy and no longer lumpy. I like to use the stand mixer with the paddle attachment, but you can use a hand mixer or just a wooden spoon or spatula.
  • Once the cream cheese is soft and creamy, stir in the mayo, sour cream and lime juice until fully combined.
  • Next add the salt, cumin, garlic powder, and white pepper and mix until incorporated evenly.
  • Then stir in the drained tomatoes with green chilies and southwest corn.
  • Now fold in the chopped cilantro and shredded sharp cheddar cheese until completely combined.
  • Chill the dip covered until ready to serve.
