Bacon Wrapped Cheesy Broccoli Chicken Recipe Ingredients
- Bacon
- Chicken Breast Cutlets
- Olive Oil
- Garlic Powder
- Onion Powder
- Paprika
- Salt
- Black Pepper
- Broccoli Florets
- Shredded Co-Jack Cheese
Substitution Suggestions
- Bacon: There is no good substitute for the flavor of bacon. If you need avoid pork products, you can try turkey bacon.
- Chicken Breast Cutlets: If you can't find thinly sliced chicken breasts you can make your own. If you prefer you can used skinless, boneless chicken thighs.
- Olive Oil: Any neutral oil will work: avocado oil, vegetable oil, canola oil, or grapeseed oil are good options.
- Seasonings: Garlic powder, onion powder, paprika, salt and black pepper are my go to seasonings, but you can use your favorite seasoning blend.
- Broccoli Florets: Fresh broccoli florets work best in this recipe. Using frozen broccoli has too much moisture and the broccoli will turn out really soggy and mushy.
- Shredded Co-Jack Cheese: Use your favorite cheese! Cheddar cheese, Pepper Jack cheese, and Mozzarella cheese are all great options.
What are Chicken Cutlets?
Chicken cutlets are simply chicken breasts cut in half to create thin pieces. The hardest part of creating chicken cutlets is cutting the chicken in half evenly. If needed, the chicken can be pounded with a meat mallet to even it out. They are also available already cut for you in the meat department of the grocery store.
How to Make Bacon Wrapped Chicken stuffed with Cheesy Broccoli
- First, gather all your ingredients and preheat the oven to 375°F.
- Lay the sliced bacon on a cutting board or baking sheet spread out.
- Next, prepare the chicken. Place a chicken cutlet on top of each piece of bacon, both should be laying the same direction. If needed, pound the chicken to an even thickness for even cooking.
- Rub the olive oil over both sides of each piece of chicken. In a small bowl, combine the garlic powder, onion powder, paprika, salt and pepper. Sprinkle over both sides of chicken and rub in with your hands.
- Now add the chopped broccoli florets on the wider end of the chicken pieces and then top with shredded cheese.
- Take the thinner side or the tip of the chicken breast and pull it over the broccoli and cheese. While holding the chicken ends together take the piece of bacon and wrap it around the chicken to hold everything in place.
- Place the wrapped chicken seam side down in a 9x13 baking dish. Repeat with the rest of the chicken.
- Bake the chicken for 40-45 minutes and until the internal temperature of the thickest part of the chicken reaches 160°F. Let the chicken rest for 5 minutes this will let the chicken finish cooking and allow the juices to redistribute back into the meat.

Tips for Bacon Wrapped Cheesy Broccoli Chicken
- Make sure all the chicken breasts are the same size so they all cook evenly. The breasts should be around ½ inch thick or less. Pound the chicken breasts with a meat mallet between plastic wrap, parchment paper or in a zip top bag.
- Pull the bacon somewhat tight to really hold the chicken and filling in place.
- Use an instant read thermometer so you don't overcook your chicken. Cook chicken until the thickest part reaches 160°F.
- Let the chicken rest. This is extremely important! It needs time to rest so the juices can redistribute throughout the piece of chicken. If you cut into it right away, all the juices will come flooding out and you will be left with dry chicken.

Ingredients
- 6 slices bacon
- 6 chicken cutlets (about 4 oz each), pounded to even thickness, about ½ inch
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups broccoli florets, cut small if needed
- 1 cup shredded co-jack cheese
Instructions
- Preheat oven to 375°F.
- Lay slices of bacon on a cutting board or baking sheet.
- Lay the chicken on top of the bacon, facing the same direction.
- Rub the oil over both sides of the chicken.
- In a small bowl, combine garlic powder, onion powder, paprika, salt and pepper. Sprinkle it over both sides of chicken pieces and rub into chicken.
- Evenly place the broccoli florets on the wider end of the chicken pieces.
- Evenly top the broccoli with the shredded cheese.
- Take the thinner side of the chicken and fold it over the broccoli. Holding the ends of chicken together, wrap the bacon around the chicken to hold it all together.
- Place the chicken seam side down in a 9x13 dish. Repeat with rest of chicken and bacon.
- Bake for 40-45 minutes until internal temp of thickest part of chicken is 160°F. Let chicken rest for 5 minutes before serving.
