    Roast Chicken Cobb Salad

    Roast Chicken Cobb Salad is filled with everything you would want in a healthy and delicious salad. A bed of lettuce topped with roast chicken, tomatoes, bacon, avocado, hard boiled eggs, and cheese! What else is needed for a fulfilling and healthy dinner?

    I love me some good filling salads and could eat them daily! However, I married myself a meat and potato guy and he would rather keep the salads as a side or appetizer. Thankfully, I run this kitchen and he eats what I put on the table, even if its a salad! 😂 Cobb Salad is one of my favorites along side Taco Salads. I could eat them for days!

    Roast Chicken Cobb Salad with hard boiled eggs and tomatoes

    Cobb Salad is a classic chopped salad typically made of lettuce, chicken, bacon, avocado, tomatoes, hard boiled eggs and stinky cheese. I have yet to grown to like blue cheese or Roquefort cheese, which is stinky cheese, so I substitute shredded cheese. My eldest child loves blue cheese though, so I buy it for her. It's also normally served with a red wine vinaigrette, which if you've never tried, you are missing out. It is delicious!

    How to Make Roast Chicken Cobb Salad

    Lettuce

    This salad starts with a bed of lettuce. I like to use a mix of romaine and iceberg. Bailee, my eldest, likes to add spinach to hers. You choose your favorite. I like to put about 2 cups of mixed lettuce on each plate or in a large bowl when making individual salads. I'll put about 10-12 cups on a huge platter when making the salad family style.

    Roast Chicken

    This salad is so easy to make when using leftover chicken. We almost always have Cobb salad after I make any of these chicken recipes: Crock Pot Chicken, Perfect Roast Chicken and Herb Roasted Spatchcock Chicken. I also have given the salad a little Southwest twist with my Baked Cumin Chicken too. So good!

    Bacon

    I like to make bacon in advance and keep it on hand in the fridge. I wrote a post about how I make my bacon in the oven. You can read it HERE-How to Bake Bacon. It's easy and mess free! Chop some of the bacon and it will be ready to top this delicious salad!

    Hard Boiled Eggs

    There are many ways to make hard boiled eggs, but my favorite way now is with the instant pot! It is so easy and creates the easiest peel eggs! Find the recipe HERE-Instant Pot Hard "Boiled" Eggs.

    Avocado

    When using avocado you can slice or chop it. I like to chop mine into bite size pieces, it's easier to eat!

    Tomatoes

    My favorite type of tomatoes to use for chopped salads are Roma tomatoes. You could use grape or cherry tomatoes cut in half or even a beef steak tomato chopped. Whichever you like best.

    Cheese

    This salad is typically served with Roquefort cheese, but I am not a fan. I substitute with shredded co-jack or sharp cheddar is good too. I do buy the stinky cheese for my daughter, because she loves it.

    Dressing

    You can use your favorite dressing. My favorite on this salad is a blend of ranch and french. Yummy! I also love Italian dressing, homemade and bottled. My stinky cheese lover likes to use blue cheese dressing! The common dressing served with this salad is a Red Wine Vinaigrette which is super tasty as well! If you haven't tried this kind of dressing, I urge you to try it! So good!

    Other Options

    If desired you can also add cucumbers, sliced red onions, croutons and some salt and pepper. It would only make this healthy salad even tastier.

    There you have it, the easiest and tastiest salad that can be made super quick. A healthy meal the whole family can customize to their liking and will totally love!

    Ingredients

    • 2 cups chopped lettuce, romaine and iceberg
    • ½ cup shredded or diced chicken, about 4 oz
    • 2 tablespoons cooked bacon, chopped
    • 1 hard boiled egg, sliced
    • ¼ avocado, diced
    • ½ roma tomato, diced
    • 2 tablespoons shredded cheese
    • favorite dressing

    Instructions

    • Place the lettuce on a plate or in a large bowl.
    • Top with chicken, bacon, eggs, avocado, tomatoes and drizzle with dressing.
    • Eat and Enjoy!
