    Ice Cream Cookie Sandwiches

    These Ice Cream Cookie Sandwiches are an easy, yet irresistible sweet treat! They are perfect to make ahead and pull out to impress your friends and family, or indulge yourself!

    • Customizable with any kind of cookie, flavor of ice cream, and fun toppings.
    • Great for entertaining, since they can be made ahead of time and served straight from the freezer. A fun treat for birthday parties!
    • The kids can help create their own sandwiches with their favorite flavors.
    • Delicious anytime of year. A cold treat in the summer but just as satisfying during the holidays.

    Ice Cream Cookie Sandwich Recipe Ingredients

    • Homemade or Store Bought Cookies
    • Homemade or Store Bought Ice Cream
    • Mini Chocolate Chips or Sprinkles

    Best Cookies to Use

    I like using homemade cookies the best for these sweet treats. However, your favorite store bought cookie will work too. My favorite is Chocolate Sugar Cookies because it takes me bake to my childhood when I lived off of Schwan's Ice Cream Sandwiches.

    Best Ice Cream to Use

    This all depends on your personal favorite! I am a classic gal, and I prefer vanilla ice cream. I love my homemade recipe! Have fun with the flavors and make your own favorite creations!

    How to Make Ice Cream Cookie Sandwiches

    This recipe couldn't be easier, simply let the ice cream soften a bit, make the sandwiches, wrap in plastic and freeze! I'll break it down more for you.

    1. First, take the ice cream out of the freezer and let soften for about 10 minutes.
    2. If using sprinkles or mini chocolate chips, pour about ¼-1/2 cup each into a shallow plate.
    3. Next, scoop out 3 cups of ice cream.
    4. Using a ½ cup measuring cup or large 3.25 scoop, scoop ice cream and place on bottom side of 6 cookies.

    1. Then top ice cream with remaining 6 cookies and gently press to push ice cream to edges.
    2. Roll edges of sandwich in sprinkles or mini chocolate chips.
    3. Place sandwiches on a sheet pan and freeze for 1-2 hours before serving.
    4. Eat and enjoy!

    Storing Ice Cream Cookie Sandwiches

    If not serving sandwiches on the same day, wrap them in plastic once frozen and store in a freezer safe container or freezer bag. They'll keep in the freezer for 3-4 months.

    Heather's Favorite Tools for this Recipe

    • These nestled mixing bowls are my favorite! I used to be a Pampered Chef consultant so I really love there batter bowls too!
    • Again, I love the Pampered Chef sheet pans and cookie sheets, but these aluminum sheet pans from Nordic Ware are a great option too.
    • This ice cream scoop is the best. It makes dishing out hard ice cream easier.

    Tips for Homemade Ice Cream Cookie Sandwiches

    • When making ahead, tightly wrap them in plastic before placing in freezer safe container or zip top bag. This helps hold the sandwiches together and keeps them extra fresh.
    • Make a double batch to have extra's on hand! Only assemble 6 at a time so the sandwiches don't melt too much.
    • If making homemade cookies, do not over bake them. Soft and chewy cookies are ideal for ice cream sandwiches.
    • Let the ice cream sit out for 10 minutes before scooping and assembling the sandwiches. If the ice cream is too hard the cookies can crack or crumble when assembling.
    • Freeze ice cream sandwiches for at least an hour before serving. This way it won't melt immediately while enjoying!

    Ice Cream Cookie Sandwiches

    Ingredients

    • 12 cookies, homemade or store bought
    • 3 cups ice cream, homemade or store bought
    • ½ cup sprinkles or mini chocolate chips, optional

    Instructions

    • Take the ice cream out of the freezer and let it soften for about 10 minutes.
    • If using sprinkles or mini chips, pour ¼-1/2 cup on a shallow plate.
    • Scoop out 3 cups of ice cream.
    • Using a measuring cup or large scoop, place ½ cup of ice cream on bottom side of cookie. Repeat with 5 more cookies.
    • Top ice cream with remaining cookies. Gently press to adhere cookies and push ice cream to edges.
    • Roll sandwiches in sprinkles or mini chips.
    • Place sandwiches on sheet pan and freeze for 1-2 hours until firm.
    • Serve and enjoy!
    • Wrap the sandwiches in plastic wrap, place in a freezer safe container or zip top bag and freeze for 3-4 months.
