    Confetti Sugar Cookies

    These Confetti Sugar Cookies are a simple drop sugar cookie that is filled with sprinkles. They require no chilling and can be made and baked right away, making them great for any occasion.

    These delicious cookies are a super fun treat for anyone who loves sprinkles! And according to my youngest daughter, Ava, sprinkles make everything better. I can't really disagree with her, she is pretty smart! Sprinkles are what make these cookies so much fun.

    Confetti Sugar Cookies Ingredients

    • Salted Butter
    • White Sugar
    • Egg
    • Pure Vanilla Extract
    • Baking Powder
    • Baking Soda
    • Unbleached All Purpose Flour
    • Colorful Sprinkles (Jimmies), Preferably Dye-Free

    Substitution Suggestions:

    • Salted Butter: You can use unsalted butter if you prefer, but add an extra ½ teaspoon of salt to the cookie dough.
    • Pure Vanilla Extract: Use only pure extract. The imitation stuff leaves an unwanted after taste that will affect the outcome of the cookie. If you like, you can also add a ¼ teaspoon of pure almond extract to the cookies. It adds just a subtle amount of almond flavor and a little extra wow factor.
    • Unbleached All Purpose Flour: I prefer to use unbleached all purpose flour or white whole wheat flour in this recipe so the cookies stay light in color. Whole wheat flour can be used but the cookies will be a lot darker in color and the rainbow sprinkles won't be as vibrant.

    These cookies are so cute, super simple, and do not need to chill. I repeat... these Confetti Sugar Cookies require NO CHILLING! Most sugar cookies need to chill so the butter doesn't cause too much spreading while the cookies bake. These cookies are simple drop cookies, so spreading is not an issue, therefore no need to chill which means you can make and bake right away, and then devour them all within 30 minutes. That's my kind of cookie.

    How to Make Confetti Sugar Cookies

    1. First thing you will need to do to make these chewy sugar cookies is heat oven to 350°F and line 2 baking sheets with parchment paper.

    1. In a stand mixer with paddle attachment or with hand mixer and a large mixing bowl, cream the butter and sugar together until light and fluffy, takes about 2 minutes.
    2. Then to the butter mixture, add in the egg and vanilla extract and beat until creamy and smooth, and scraping the sides of the bowl.
    3. Next, add the dry ingredients: baking powder, baking soda, and all purpose flour. Mix on low speed just until combined.
    4. Now comes the sprinkles. We made our own blend by mixing different colors together. You can make your own blend or buy the already assorted color blends. You will need lots of sprinkles, about a half cup. Add the sprinkles into the dough and mix together on low or fold in with a spatula.

    1. Drop the cookies using a tablespoon cookie scoop or a tablespoon measuring spoon 2 inches apart onto the prepared baking sheet. Bake cookies for 10-12 minutes.

    1. If you like crunchy, crispy cookies bake for 12 minutes and until the edges and bottom of the cookies are just starting to become golden brown. We prefer a crispy edge and soft center for these confetti cookies, so I bake my cookies for 11 minutes and not a minute longer. The edges will have a slight crunch and the center will be soft and chewy and perfection. If you lean more towards a gooey and soft cookie the whole way through, bake for only 9-10 minutes.

    1. Let the cookies cool on pan for 2 minutes only then remove to wire rack and cool completely.

    How to Store Confetti Sugar Cookies

    Storing: Store these cookies in an air tight container. Keep them in a cool dry place and they'll last a few weeks. If you notice the cookies starting to get a little dry and hard, add a piece of bread to the container with the cookies. It will add moisture back into the cookies.

    Freezing: These cookies freeze well! Place the cookies in a freezer safe air tight container in single layers, between pieces of wax paper. Label, date and freeze. Cookies will last 3-4 months in the freezer.

    Thawing: To thaw the frozen cookies, simply let them sit at room temperature for a few hours.

    How to Freeze Cookie Dough

    Freezing Cookie Dough: To freeze the confetti sugar cookie dough: place cookie dough scoops on a parchment lined sheet pan. Then freeze the dough. Once frozen, place the frozen dough balls in a freezer safe air tight container or zip top bag. I like to freeze them between layers of wax paper. Label, date and keep frozen until ready to use.

    Baking Frozen Cookie Dough: To bake the frozen cookie dough, place dough scoops on parchment lined cookie sheets 2 inches apart. Then bake frozen dough at 350°F for 12-14 minutes or until edges are just starting to turn golden brown and the centers no longer look wet. Cook time will vary on how cold your cookies are when placed in the oven. Cool cookies on pan for 2 minutes and then remove to wire rack to cool completely.

    Tips for Drop Sugar Cookie Recipe

    • Always fluff your flour and then spoon and level it to measure. Doing this will prevent you from adding too much flour to your recipe and ultimately making the cookies too dry.
    • Use a cookie scoop to get the same size cookies, that way they will all cook evenly. I like to use the Pampered Chef small size scoop which is equal to about 1 tablespoon.
    • If using cookie sheets more than once during baking, make sure the cookie sheet is completely cooled before adding dough on it.
    • For best results don't over bake the cookies. Over baking will cause the cookies to be dry and hard. The centers should look set and not glossy and the bottoms just barely browned.
    • If you want a larger size cookie, use a medium cookie scoop or 2 tablespoons and increase the baking time by 2 minutes.
    • This is the perfect recipe to customize the cookies for any holiday, party, or event. Use different assortments and colors of sprinkles.

    • ¾ cup sugar
    • 1 large egg
    • ½ teaspoon pure vanilla extract
    • 1 teaspoon baking powder
    • ¼ teaspoon baking soda
    • 1½ cups unbleached all purpose flour
    • ½ cup sprinkles (jimmies), preferably dye-free

    Instructions

    • Add the baking powder, baking soda and all purpose flour. Mix together on low speed until everything is just combined.
    • Add sprinkles and mix on low or fold in with a spatula until evenly incorporated.
    • Drop on baking sheet using a tablespoon cookie scoop or measuring spoon, placing cookies 2 inches apart. I get 13 cookies on each baking sheet.
    • Bake for 10-12 minutes.
    • Let cool for 2 minutes only on pan then remove to wire rack to cool completely.
