    No Bake Scotch-a-roos

    No Bake Scotch-a-roos are a chewy and crunchy combination of peanut butter, honey, cornflakes then topped with a blend of butterscotch and chocolate. Make these and sink your teeth into one of the best dessert bars ever!

    These bars have got to be my hubby's all time favorite! I know, this family of mine has a lot of favorites, and that's my fault because they are the best taste testers and they give it to me straight. Scotch-a-roos are Chad's favorite because he's a fan of anything that involves peanut butter and chocolate. Who isn't a fan of that combination?! My recipe is a bit different from a normal no bake scotch-a-roo recipe. Most are made with sugar, corn syrup, peanut butter and puffed rice cereal or aka Rice Crispies. I did some experimenting and took these bars to the next level!

    What's all in No Bake Scotch-a-roos?

    • Peanut Butter
    • Brown Sugar
    • Honey
    • Corn Flakes
    • Butterscotch Chips
    • Semi-sweet Chocolate Chips

    I prefer corn flakes over puffed rice, even as a cereal option I like corn flakes better. What can I say, I am an Iowa girl at heart forever and always! So, I swapped out the rice cereal for corn flakes. I also swapped out the sugar for brown sugar. This gives it more of a caramel candy taste and texture. Then to top it off, I swapped out the corn syrup for local honey! Add the chocolate and butterscotch frosting and Viola! I know what you're thinking.... I'm a genius! Not even close, but these bars did turn out pretty fAbUlous!

    Bring these bars to family gatherings, block parties, or a summer BBQ and let everyone tell you just how fabulous they really are! They are simple and quick to make and require no oven, so you can keep your house cool in the summer and still enjoy a delicious sweet treat.

    How to Make Easy No Bake Scotch-a-roos

    Step 1: Make the Chewy Base

    In a large pot combine the brown sugar and honey. Heat on low-medium until the sugar is completely dissolved, do not boil. Boiling will make the bars hard instead of chewy. Now, add the peanut butter and stir until completely melted.

    Step 2: Create the Bars

    Pour the corn flakes into the peanut butter base and stir it all together until all the cornflakes are coated. Spread the bars into a greased 15x10 rimmed sheet pan. You can use a spatula, some wax paper with your hands, or lightly spray your hands with cooking spray and pat the mixture down evenly. Don't compress it down too much or you will have hard bars.

    Step 3: Make the Scotch Topping

    In a microwave safe bowl, combine the butterscotch and chocolate chips. Microwave on 30 second intervals stirring in between until the mix is completely melted and smooth. Evenly spread the topping over the bars. Let the bars sit for awhile so the topping has time to set. Alternatley, you can use a double boiler instead of the microwave. If you are in a pinch, you can put the bars in the fridge. Don't let them hang out in there too long or the bars will be hard to cut.

    Now, these bars are not diet friendly at all. But, my philosophy is: a little bit of everything is ok in moderation and calories don't count on Sundays or holidays. 😉 With that said, I ate almost half a pan in one day! Ooopsies! I don't recommend doing that, but if it happens I completely understand why.

    No Bake Scotch-a-roos

    Ingredients

    • 2 cups brown sugar
    • 2 cups honey
    • 2 cups creamy peanut butter
    • 10 cups corn flakes
    • 11-12 oz semi-sweet chocolate chips, approx 2 cups
    • 11-12 oz butterscotch chips, approx 2 cups

    Instructions

    • In a large pot, dissolve brown sugar in honey over low-med heat, do not boil. Remove from heat.
    • Stir in peanut butter until completely melted.
    • Stir in corn flakes until thoroughly combined and corn flakes are completely coated.
    • Spread into a greased 11x15 rimmed sheet pan.
    • In a microwave safe bowl, melt chocolate and butterscotch chips together in 30 second intervals and stirring after each one until melted and smooth. Or melt in a double boiler.
    • Spread evenly over bars.
    • Let cool and frosting set before serving.
