Scotcharoo Popcorn Recipe Ingredients
- Popped Popcorn or Kernals
- Creamy Peanut Butter
- Honey
- Brown Sugar
- Salt
- Semi-Sweet Chocolate Chips
- Butterscotch Chips
- Coconut Oil
Substitution Suggestions
- Popcorn: I like to use air popped popcorn. However, you can use popcorn popped on the stove, microwave popcorn or store bought bagged popcorn.
- Peanut Butter: I have not tried this recipe with anything but creamy peanut butter. I would think almond butter would work too.
- Honey: Light corn syrup can be substituted.
- Semi-Sweet Chocolate Chips: Dark chocolate chips or milk chocolate chips are great options.
- Coconut Oil: I use the coconut oil to help harden the chocolate drizzle. You can leave it out if needed.
How to Make Scotcharoo Popcorn
- First, put the popped popcorn in a large bowl and remove any kernels that didn't pop.
- Next, in a medium saucepan, melt together the peanut butter, honey, brown sugar and pinch salt over medium-low heat just until smooth. Don't let it boil or it will harden and not coat the popcorn.
- Then pour the peanut butter mix over the popcorn and gently stir it together until all the popcorn is coated. Once it is all coated, spread it out on a large baking sheet lined with parchment paper.
- Now, either in a small saucepan or in a microwave safe bowl, melt together the chocolate chips, butterscotch chips and coconut oil until smooth. Drizzle the chocolate over the popcorn.
You now have two choices... eat it NOW or eat it later. I would eat it NOW if I were you! It is so delicious, sweet and addicting!

Storing Scotcharoo Popcorn
Store this sweet popcorn in a tightly covered bowl or air tight container. It will last about a week at room temperature. Or you can store it in the fridge and it will last a bit longer.
I have not frozen this popcorn, because it doesn't last more than a day when I make it. However, people have told me that it freezes well!

- Pre-cut parchment paper is a life saver and so easy. No cutting my fingers!

Tips for Scotcharoo Popcorn
- Pick out any kernels that didn't pop. That way you won't hurt your teeth.
- Don't overcook the peanut butter and sugar. Once it is completely melted and smooth remove it from the heat. If you heat it too long it will become hard and won't coat the popcorn.
- If you use microwave popcorn, pop 2 bags and omit the salt in the recipe.

Scotcharoo Popcorn
Ingredients
- 8 cups popped popcorn, plain (about ⅓ cup kernels)
- 1 cup creamy peanut butter
- ¾ cup honey
- 1 cup brown sugar
- ¼ teaspoon salt
- ¼ cup semi-sweet chocolate chips
- ¼ cup butterscotch chips
- 1 teaspoon coconut oil
Instructions
- Put the popcorn in a large bowl and remove any kernels left that didn't pop.
- In a medium saucepan, over medium-low heat melt together the peanut butter, honey, brown sugar and salt until smooth. Do NOT overheat or it will be too hard to coat the popcorn.
- Pour the peanut butter mix over the popcorn and gently fold it until all the popcorn is coated.
- Spread the popcorn on a large baking sheet lined with parchment paper.
- In a small sauce pan or microwave safe bowl, melt together the chocolate chips, butterscotch chips and coconut oil until smooth.
- Drizzle the chocolate over the popcorn.
- Let rest until set, about 30-60 minutes.

What can we use in place of the peanutbutter? As I have a friend who is deathly allergic to peanuts! I wanted try this because my sweet handsome pit/lab boy name was Scotch that I lost to bone cancer and year ago (he looooved fresh popcorn lol not microwave). Thank you so much for your help .

You could try almond butter or sunflower seed butter. I haven't tried those but I think they would substitute ok.

I like it but it melts, any way to prevent it from melting? I did put the pan in the refrigerator and it was solid but when I tried to bag it to give away, it began to melt once again

Hi! I haven't had any trouble with the popcorn melting. The coconut oil in the chocolate keeps the drizzle hard. The popcorn itself will stay mostly soft since it's not a baked caramel corn.

Hi! You can just leave out the coconut oil. I like to use it because it helps the chocolate harden faster.

Try starting with Kettle Corn, then drizzling the scotch-a-roo over it, then chocolate.
We take fresh Kettle Corn, and drizzle chocolate and white chocolate over it, then break it up for treats, but I bet the peanut buttery roo sauce would be great. It just has to set.
