Substitution Suggestions
- Salted Butter: Feel free to use unsalted butter. I suggest adding a tiny pinch of salt to the melted chocolate if you use unsalted butter.
- Semi-Sweet Chocolate Chips: If you prefer you can use milk chocolate chips or dark chocolate chips.
- Pure Vanilla Extract: I think it is essential to use pure extracts. Especially in no bake desserts. The imitation stuff can leave an unpleasant after taste.
- Almonds and Peanuts: Traditionally rocky road was made with peanuts, but I like the combination of almonds and peanuts. You can use your favorite! Cashews, walnuts or pecans are yummy options too! You want the nuts to be roasted and lightly salted. If starting with raw nuts, roast them for 8-10 minutes at 350°F and lightly salt them immediately after you take them out of the oven. The salt helps cut through the sweetness of the rest of the ingredients.

How to Make Rocky Road Bars
- First, line a 9x13 pan or baking dish with parchment paper leaving an inch over hang on the long sides. Or you can grease with nonstick cooking spray.
- In a large bowl combine the almonds, peanuts and mini marshmallows.
- Next, in a medium pot combine the sweetened condensed milk, chocolate chips and butter. Melt over low heat until everything is smooth. Do NOT boil! Remove from heat.


- Then stir in the vanilla extract and let cool 3-5 minutes.
- Now pour the chocolate mixture over the nuts and marshmallows and gently fold it all together until everything is evenly coated with the chocolate. You'll want to work as quickly as possible so the chocolate doesn't start to set.


- Scoop it into prepared pan and pat it out into an even layer.
- Let rest until set or chill in the fridge for an hour.
- Slice, serve and enjoy!
