    No Bake S'mores Bars

    These No Bake S’mores Bars bring all the nostalgic campfire flavor into your kitchen without the mess or the fire. I’ve perfected this recipe to get that gooey, chocolatey goodness just right. If you’re looking for a quick, crowd-pleasing dessert, this one is sure to become a favorite.

    No Bake S'mores Bars Ingredients

    • Graham Crackers: if you like you can use Golden Grahams cereal. I like the flavor of the actual graham crackers best.
    • Mini Marshmallows: the mini marshmallows create the best texture and melt the easiest. You can use the larger marshmallows but I would cut them in half to melt and cut the ones for the topping in quarters.
    • Milk Chocolate Chips: it is the classic chocolate for a s'more but, if you like you can use semi-sweet chocolate chips or dark chocolate chips. Dark chocolate tastes so good with all the sweetness from the marshmallows.
    • Salted Butter: if you use unsalted butter add a pinch of salt to the melted butter and marshmallows mixture. You need a little bit to balance and enhance the flavors.

    These sweet No Bake S'mores Bars are made with only 4 ingredients! A sweet treat that isn't just delicious during the summer, it's perfect in every way any time of year!

    How To Make No Bake S'mores Bars

    1. First, lightly crush the graham crackers in a zip top bag with a rolling pin or mallet. Or you can pulse them a few times in a food processor.
    2. Remove ¼ cup of crushed graham crackers, ½ cup of the marshmallows, and 2 tablespoons of milk chocolate chips and set them aside. You will need them later to create the gorgeous topping.
    3. Now, line a 9x9 baking dish with parchment paper or grease with nonstick cooking spray. Make sure to have the paper go up the sides of the dish. This helps with easy removal and easy slicing.
    4. Melt the butter in a large pot over low heat, then add the marshmallows and stir until all melted together. Remove from heat.

    1. Next, pour in the lightly crushed graham crackers and stir it all together until all the crackers are coated in the marshmallows.
    2. Now spread and gently pat the mixture into prepared baking pan.

    Pro Tip: Lightly wet your fingers or spray them with some nonstick cooking spray to easily pat the marshmallow mix.

    1. In a microwave safe bowl or using a double boiler, melt the milk chocolate chips in 30 second increments stirring between each one.
    2. Once completely melted and smooth, evenly spread the chocolate over the graham crackers.

    1. Finally, sprinkle the reserved graham cracker crumbs, marshmallows and chocolate chips on top of the melted chocolate and lightly pat them down to adhere to the melted chocolate.
    2. Let the bars set for at least one hour.
    3. Then slice and enjoy.

    Serving S'mores Marshmallow Treats

    These treats are great served at parties, family gatherings, picnics or pot-lucks. The kids love to have them added in their school lunches as a fun treat too.

    Storing No Bake S'mores Bars

    Store these bars in an air tight container for 4 days. If you want them to last longer (I don't know how there will be any left but...) you can store them in the fridge for a few days too.

    Heather's Favorite Tools for this Recipe

    • If you are going to use a food processor to pulse the crackers, I love my Cuisinart!
    • These nestled mixing bowls are my favorite for prepping ingredients.
    • I really like these Pyrex baking dishes for baking.
    • Use a nonstick pot for melting the butter and marshmallows. I love my Rachael Ray pots and pans that I've had since I got married and they're still going strong!
    • Parchment paper is a life saver for lifting the bars out of the pan and making clean up easier.

    Tips For S'mores Marshmallow Treats

    • Gather and prepare all your ingredients before starting the recipe. This way you won't miss an essential ingredient.
    • Read the recipe from start to finish before starting to make the bars. This helps prevent any mistakes from happening. I've learned from experience.
    • Line the baking dish with parchment paper. Keep the paper long enough to cover the sides of the dish and leaving an inch overhang on opposite sides. This will help with removing the bars to slice them easier.
    • Pat down the marshmallow crackers gently. If the mix is packed down too much, it will result in hard bars rather than nice and chewy bars.
    • To help spread and pat the bars down without a sticky mess, wet your hands with water or gently spray them with non stick cooking spray.
    • For smaller pieces, cut them into 12 bars.
    • Double the recipe for more s'mores deliciousness. Double and fill a 9x13 baking sheet or baking dish!

    • 2 packages graham crackers-18 full sheets, roughly crushed
    • 10 oz bag mini marshmallows
    • 11 oz bag milk chocolate chips
    • 4 tablespoons salted butter

      The bottom is rubbery and hard to cut and gross

        If the bars got rubbery, it is most likely because the marshmallows were heated too long or on too high heat.
