This Classic Egg Salad is a cinch to make and only needs a few ingredients to make it super tasty! Serve it on your favorite bread or use it as a dip with crackers. Either way, you'll keep coming back for more!

This egg salad is just how my grandma would make it, creamy and flavorful! When I was in college (the first time around) I would drive up to my grandma's between classes for lunch. She would have egg salad in the fridge waiting for me, and she always made sure the candy jar was full. That candy jar now sits on my table, often empty, but it is there and is a constant reminder of how wonderful my grandma truly was. I miss her dearly.

Ingredients Needed for Simple Egg Salad

    • 6 eggs, hard boiled and peeled
    • ½ cup Miracle Whip or Mayo
    • ¼ teaspoon black pepper
    • ½ teaspoon salt
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • 1 teaspoon dried chives

How to Make the Perfect Easy Peel Hard Boiled Eggs

I have tried so many ways to make hard boiled eggs and every single one of them was an epic fail. Until... I made them in the Instant Pot! I will never actually boil eggs again. Using the Instant Pot makes them so easy. If you don't have an Instant Pot, no worries, you can make the eggs whatever way works for you. Find the recipe for Instant Pot Hard Boiled Eggs-HERE.

How to Make Creamy Egg Salad

This recipe is so simple. You basically add all the ingredients to a bowl and mix it all up. There's not much else to it.

First, after the eggs are peeled, chop them up. Add the eggs and remaining ingredients to a bowl and mix it all together well. Spoon the egg salad onto some bread with some lettuce, cheese and tomato or just plain is how my grandma served it and devour it. Or you can scoop crackers with the dip. Either way this egg salad is a keeper and a recipe that is perfect for cold summer sandwiches!

How to Chop Hard Boiled Eggs

I will let you in on a little secret, I don't do any chopping at all. I will either use an egg slicer and then roughly chop the slices or I have a tool from Pampered Chef called the Mix n Masher that works like a charm. Either way works well and requires no real chopping.

    Miracle Whip or Mayo?

This is ongoing debate at our house. We are split, half like the whip and the other like the mayo. I grew up with the whip and my grandma used Miracle Whip, so I use it more often than the other stuff. I like them both, but I really like the tang from the whip. How many times you think I can say whip in this paragraph? 😂 Both options work well in this egg salad, I have tried them both. However, when I use mayo, I add a splash of lemon juice to give it that little bit of tang I like.
