With experience from both restaurant work and everyday family meals, I have learned how to create dishes that are reliable and delicious. I test every dish until my kids and taste testers agree it's a keeper. I bring that same from scratch, Midwest inspired approach to every recipe I share. When I say this dinner is worth making, it is because it has been cooked, tweaked, and loved right in my own kitchen.

Chicken and Gravy over Mashed Potatoes Recipe Ingredients
- Salted Butter
- Unbleached All Purpose Flour
- Onion Powder
- Garlic Powder
- Dried Parsley
- Salt
- Black Pepper
- Chicken Broth
- Milk
- Cooked Chicken
- Russet Potatoes
Substitution Suggestions
- Salted Butter: Feel free to use unsalted butter. Taste the gravy and mashed potatoes before serving to make sure they are seasoned well.
- All Purpose Flour: You can use white whole wheat flour or whole wheat flour.
- Chicken Broth: Chicken stock or bone broth will work. You can even use water with chicken bouillon which makes a really flavorful gravy.
- Milk: Use what you drink. I use 2% cows milk, but whole milk, skim milk, non dairy milk will work. For a more richer gravy you could also use half and half.
- Chicken: I like to use leftover crock pot whole chicken or a rotisserie chicken best. You could also use my recipe for shredded chicken breasts.
- Russet Potatoes: Russet is our go to for mashed potatoes, but Yukon Gold and Red potatoes work too.

How to Make Instant Pot Mashed Potatoes
You will want to start with the potatoes first since they take longer to cook than the chicken and gravy.
- First, peel potatoes, rinse them and cut into 1 inch chunks.
- Place potatoes in the instant pot.
- Then add ¾ cup of water and sprinkle potatoes with salt.
- Place lid on instant pot, set the valve to sealing.
- Set the cooker on manual pressure for 10 minutes.

- Once the time is up, carefully turn the valve with a wooden spoon to do a quick pressure release.
- After the pin has dropped, remove the lid and mash the potatoes with a hand masher or hand beaters. If there is too much excess water, pour it out.
- Add the stick of butter, milk or cream, salt and black pepper. Stir it up good.
- Enjoy smothered with chicken and gravy.

How to Make Chicken and Gravy
- First, over medium heat melt the butter in a large deep skillet.
- Once melted, whisk in the all purpose flour, onion powder, garlic powder, parsley, salt and black pepper. Cook for 1-2 minutes whisking often.
- Slowly pour in the chicken broth while whisking the entire time.

- Now slowly pour in the milk and whisk it all together well.
- Bring gravy to a boil and then add the chicken.
- Simmer the gravy for 6-8 minutes until thickened.
- Ladle gravy over creamy mashed potatoes and enjoy!!!

Storing Chicken with Gravy and Mashed Potatoes
Storing: It is best to store the chicken and gravy separate from the mashed potatoes. Add the chicken and gravy to an airtight container and the leftover mashed potatoes to a separate airtight container. Store in fridge for up to 4 days.
Reheating: Reheat quickly in the microwave until warmed through. Or you can reheat separately on the stove over low heat. If needed add a little milk to the potatoes to make them creamy again, and a little milk to the gravy if needed to thin out.
