Chicken and Gravy over Mashed Potatoes

Mashed Potatoes 4 pounds russet potatoes , peeled and cut into 1 inches pieces ¾ cup water 1 teaspoon salt ½ cup salted butter ½ cup milk , or heavy cream salt and pepper , to taste
Mashed Potatoes Place cut potatoes in Instant Pot and add water and salt.
Place lid on and move valve to sealing. Set to high pressure for 10 minutes.
Once time is up, carefully do a quick pressure release. Remove lid after valve stem has dropped.
Mash potatoes with hand masher or electric beater. Add in butter, milk and some salt and pepper. Mix it up well.
Chicken and Gravy Over medium heat melt the butter in a large deep skillet.
Once melted, whisk in the all purpose flour, onion powder, garlic powder, parsley, salt and black pepper. Cook for 1-2 minutes whisking often.
Slowly pour in the chicken broth while whisking the entire time.
Slowly add the milk and whisk it all together well.
Bring gravy to a boil and then add the chicken. Simmer the gravy for 6-8 minutes until thickened, stirring occasionally.
Ladle gravy over creamy mashed potatoes and enjoy!!!
