Substitution Suggestions:
- Creamer Potatoes: These potatoes are small and creamy and have the best texture when roasted. However, baby reds, russet, or yukon gold potatoes can all be used.
- Olive Oil: Any neutral oil like canola, vegetable or avocado can be used, but olive oil has the best flavor.
- Garlic Powder: This recipe works great with fresh minced garlic too.

- Cut potatoes into 1 inch bite size pieces.
- Add the potatoes, olive oil, garlic powder, onion powder, salt, black pepper, Italian seasoning and grated parmesan cheese in a large bowl or zip top bag. Toss it all to combine everything evenly.
- Spread the potatoes in a single layer on a parchment lined sheet pan.
- Roast potatoes in a preheated 400°F oven for 30-40 minutes until fork tender, giving them a stir about half way through.
