These healthier Almond Butter Cookies are so good and simple, no mixer or chilling required. They are naturally gluten free and vegan. A little healthier treat that is guilt free and delicious!
If you have not tried almond butter, these cookies are the way to go! Almond butter has a wonderful toasty flavor. It is a bit more grainy than a creamy peanut butter, but that's what makes it so good. I literally eat it out of the jar with a spoon because it is that good!

Almond Butter Cookies Ingredients
- Unsweetened Almond Butter
- Unsweetened Applesauce
- Coconut Sugar
- Coconut Flour
- Baking Powder
- Cinnamon
- Salt
- Dark Chocolate Chunks
Substitution Suggestions:
- Almond Butter: This recipe is also good with peanut butter and sunflower seed butter. You could also try it with other nut or seed butters.
- Coconut Sugar: Brown sugar can be substituted.
- Dark Chocolate Chunks: substitute with your favorite chocolate.
How to Make Healthy Almond Butter Cookies
- In a large mixing bowl, stir together the almond butter, applesauce and coconut sugar.
- Add the coconut flour, baking powder, cinnamon and salt then stir to combine it well.
- Next, fold in the dark chocolate chunks. Optional: you can leave a few out to press on top of the cookies for a pretty presentation.
- Using a small cookie scoop or level tablespoon, drop cookie dough on parchment lined cookie sheets. Then slightly flatten the cookies with your fingertips.
- Press any extra chocolate chunks on top.
- Bake cookies at 350°F for 10-12 minutes until the edges are slightly golden and the center is still somewhat soft.
- Let cookies cool on pan for 3-5 minutes then remove and cool completely.
Tips for the Best Almond Butter Cookies
- If you store your almond butter in the fridge let it sit at room temperature for awhile. This will help stir the almond butter together well and make it easier to stir the cookie ingredients together.
- Stir the almond butter very well. If the oil isn't stirred into the almond butter well the cookies will have a greasy texture. So stir, stir, stir.
- To ensure the cookies are gluten free and vegan, make sure the chocolate chunks are gluten and dairy free.
How to store and freeze Almond Butter Cookies
- Store the baked and cooled cookies in an air tight container at room temperature. They will stay fresh and soft for 5-7 days.
- To freeze baked cookies place cooled cookies in a freezer safe air tight container or zip top bag, label and date, then freeze. Cookies will last 3-4 months in freezer. To thaw cookies, let them sit at room temperature until thawed.
- Freeze cookie dough by placing portioned scoops on baking sheet and flash freezing. Once the dough is frozen place in freezer safe air tight container or zip top bag.
- To bake frozen cookie dough, follow recipe directions but increase bake time 2-3 minutes.

Ingredients
- 1 cup unsweetened almond butter, all natural
- ¼ cup applesauce
- ½ cup coconut palm sugar
- ¼ cup coconut flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ⅔ cup dark chocolate chunks

- Preheat oven to 350°F.

- Fold in the chocolate chunks (leave a few out for the top to make them pretty).
- With a small cookie scoop or level tablespoon drop onto a parchment lined or greased cookie sheet. Slightly flatten dough with your fingertips.
- Press in extra chocolate chunks on top of cookies if desired.
- Bake for 10-12 minutes or until edges are slightly browned but the middle is still somewhat soft.
- Let cool on pan a 3-5 minutes before removing to cool completely.
