    Monster Cookie Protein Balls

    These Monster Cookie Protein Balls are one of my favorite easy snacks when I want something quick, satisfying and healthy. I grab these straight from the fridge between errands, or when the kids come in from school asking for a treat. With all the classic monster cookie flavor from peanut butter, oats, and chocolate chips, they feel like a treat but still work as a healthy snack. If you love a quick and easy, family friendly recipe, you are going to want to make these right away.

    This recipe comes from years of hands on cooking and testing recipes that busy families can count on. I know how important it is to have simple, family friendly snacks ready to go, and these Monster Cookie Protein Bites deliver every time. They use simple ingredients, come together quickly, and make a healthy snack you can feel good about serving. Once you try them, they are sure to become a family favorite.

    Monster Cookie Protein Balls Recipe Ingredients

    • Rolled Oats
    • Honey
    • Creamy Peanut Butter
    • Vanilla Protein Powder
    • Mini Chocolate Chips
    • Mini M&M's

    Substitution Suggestions

    • Rolled Oats: These are also called old fashioned oats. They have been steamed and rolled and yield a larger flake. If you want you can use quick oats. Quick oats or also called Instant Oats, are steamed longer and rolled more making the flakes smaller. The texture of the ball will be a little different but just as delicious.
    • Honey: This is needed to sweeten them but also to help it all stick together. If you need to switch it out, you can use maple syrup or a different liquid sweetener.
    • Creamy Peanut Butter: I like to use a natural peanut butter that has minimal ingredients and not a lot of sugar. Use your favorite! If you can't have peanut butter use your favorite nut butter or seed butter.
    • Vanilla Protein Powder: Use your favorite protein powder. For more chocolate flavor you could also use chocolate protein powder. If you don't want to use protein powder you will need to add a little extra oats to keep the balls from being too sticky.
    • Mini Chocolate Chips & Mini M&M's: You can use just mini chocolate chips, just mini M&M's or a mix of both. I usually only use the mini chocolate chips because we can't eat M&M's. Sometimes I will add Trader Joe's Candy Coated Chocolate Drops to the mix, but usually I just stick with the mini chocolate chips.

    How to Make Monster Cookie Protein Balls

    1. First, combine all the ingredients in a bowl.
    2. Mix everything together well.

    1. Then using a medium cookie scoop, or 2 tablespoons, portion out the bites and roll them into balls.
    2. Place balls onto a parchment lined baking sheet and you can either chill and store them in the fridge or freeze them.

    Ways to Enjoy Monster Cookie Energy Balls

    • These protein bites are the perfect after school snack. They're healthy but feel like a treat. Make them ahead of time and keep them in the fridge all week.
    • Add them to the kids or spouse's lunch box for a mid-morning snack or afternoon pick me up. Or they can enjoy them as a treat with their lunch.
    • Enjoy one before or after a workout.

    Storing Protein Balls

    Storing: After the protein balls have chilled add them to an airtight container or zip top bag and keep in fridge for up to a week.

    Freezing: Once the balls are all formed and on a parchment lined baking sheet, just pop the pan in the freezer. Freeze the bites for an hour or so and then place them in an air tighter freezer safe container or zip top freezer bag.

    To Thaw: take out desired amount the night before and thaw in fridge or thaw on counter for 10-15 minutes. Or eat them frozen like my hubby and kids do!

    Heather's Favorite Tools for this Recipe

    • My MOST favorite tool in my kitchen is my KitchenAid Stand Mixer. If you don't want to mix these protein balls up by hand, use your mixer!
    • Long ago, I used to be a Pampered Chef consultant and I still prefer their baking tools and pans to any others. I like their baking sheets best, but these aluminum sheet pans from Nordic Ware are a great option too.
    • A medium sized cookie scoop that holds about 2 tablespoons is great for these protein balls. Again I use the pampered chef one but this medium scoop from OXO on Amazon is a great one.
    • Pre-cut parchment paper is a life saver and so easy. No cutting my fingers!
    • Or this silicone baking mat is great for these energy balls too!

    Tips for Monster Cookie Protein Balls

    • Make sure everything is mixed together really well before portioning the balls. If they're not, they won't hold together as well.
    • If possibly, use mini versions of the chocolate chips or M&Ms. The bites will hold together better.
    • Make ahead and store in the fridge for the week.
    • Make a double batch and freeze so you always have some on hand!
    • If you want smaller balls you can use a small cookie scoop that holds about a tablespoon. They are the perfect size for a one bite snack!

    Monster Cookie Protein Balls

    Ingredients

    • ¼ cup honey
    • ½ cup creamy peanut butter
    • ½ cup rolled oats
    • ½ cup vanilla protein powder
    • ¼ cup mini chocolate chips or mini M&M's or combination of both

    Instructions

    • Combine all ingredients into bowl and mix together very well.
    • Use a medium size cookie scoop, or 2 tablespoons, portion bites and roll into balls. Place on parchment line baking sheet.
    • Chill in fridge for 1 hour (or freeze).
    • Place in an air tight container or zip top bag and store in fridge (or freezer).
