Apple Cheesecake Bars Recipe Ingredients
- Unbleached All Purpose Flour
- Brown Sugar
- Salted Butter
- Cinnamon
- Cream Cheese
- White Sugar
- Large Eggs
- Pure Vanilla Extract

Substitution Suggestions
- All Purpose Flour: White whole wheat flour and whole wheat flour can be used. Whole wheat flour will make the crust darker but will taste just as delicious.
- Salted Butter: Feel free to use unsalted butter, but I suggest adding a pinch of salt to the crust and streusel topping if you do.
- Cinnamon: I like to just use cinnamon, but if you like nutmeg and cloves you could add a pinch of those too. Or you could use apple pie spice or all spice.
- Cream Cheese: I prefer to use cream cheese for this recipe because it gives the best rich flavor. However, you can use Neufchâtel cheese if needed.
- Pure Vanilla Extract: Pure extracts are better and yield the best flavor. Imitation extracts can leave an unpleasant after taste in your baked goods and frostings.
- Apples: Any type of apple works with this recipe. I typically use apples from my trees or Honeycrisp. Although Granny Smith apples are extra delicious too! Their tartness helps cut the sweetness in the bars. You can use your favorite, some from a friend's apple tree, or whatever is cheapest at the store. This recipe is so flavorful, any apple will work!
- Rolled Oats: For crisp and streusel toppings I use old fashioned oats or otherwise called rolled oats. You could use instant oats or quick oats but the texture of the crisp topping will be different. The rolled oats create the best texture.
How to Make Caramel Apple Cheesecake Bars with Streusel Topping
- Frist, preheat the oven to 350°F and gather all your ingredients. Line a 9x13 baking pan with parchment paper leaving an inch overhang on the long side or grease well with non-stick cooking spray.
- Next, make the crust. In a large bowl combine the all purpose flour, brown sugar, and ½ teaspoon of cinnamon. Cut in 1 cup of softened salted butter until it resembles course crumbs.
- Press the crust into an even layer in the prepared baking pan. Bake the crust for 15 minutes or until lightly browned.
- While the crust is baking, make the filling, apples and streusel topping. In a stand mixer fitted with the paddle attachment or with an electric mixer, cream together the cream cheese and granulated sugar until creamy.
- Then add the eggs, one at a time, beating well after each addition.
- Mix in the vanilla and set cheesecake aside.
- Now for the streusel, combine the all purpose flour, brown sugar and rolled oats in a large mixing bowl.
- Cut in the softened butter with a pastry blender or your hands until it resembles course crumbs. Then set streusel aside.
- Next, peel and dice the apples into small pieces. In a medium bowl combine the apples, granulated sugar and cinnamon. Stir them together well and set aside.
- Now assemble the cheesecake bars. Evenly spread the creamy cheesecake layer over the warm crust.
- Then evenly spoon the apples over the cheesecake mixture.
- Lastly, sprinkle the brown sugar streusel evenly over the apple layer.
- Now bake the cheesecake bars for 40-45 minutes until the cheesecake layer is fully set and the oat topping is a deep golden brown.
- Let the bars cool for at least 30 minutes then chill the bars for 2-4 hours before serving.
- Drizzle bars with caramel topping, if desired.
- Slice bars and serve!!

Storing Caramel Apple Cheesecake Bars
Storing: Store leftover apple cheesecake bars in an airtight container in the fridge for up to 5 days.
Freezing: These cheesecake bars freeze well! Add the chilled bars to a freezer safe airtight container, label date and freeze. You can also freeze the bars individually. Place individual bars on a sheet pan and freeze them. Once they are frozen you can layer them between pieces of wax paper in a freezer safe airtight container or individually wrap them in plastic wrap and then add them to the container or freezer bag. I like to wrap them in plastic, then I can place the frozen bar right in my husband and kids' lunch boxes. They're thawed by the time they eat lunch.
Thawing: Take the bars out a few hours before you want to enjoy them. If they are wrapped in plastic, it's easier to unwrap them while they are still frozen.

Tips for Apple Cheesecake Streusel Bars
- Read the recipe from start to finish before you start. I am speaking from experience.
- Gather all the ingredients before you start preparing the recipe. It is so much easier to bake when all the ingredients are ready.
- Use room temperature or softened butter when making the crust and streusel topping. It helps create the perfect shortbread crust and a crispier oat topping.
- Make sure the cream cheese is room temperature so it creams smoothly and there will be no lumps in the cheesecake layer.
- For an extra depth of flavor, you can toast your oats before making the streusel topping. Spread out oats on a rimmed baking sheet and bake at 300°F for 10 minutes stirring them half way. Let them cool before making topping.
- Prepare the apples last. If you prepare the apples first and let them sit, they'll macerate too long and create too much liquid. That liquid will make the cheesecake layer gummy which you don't want.
- Don't skip the cooling and chilling steps. The cheesecake needs to cool and chill so it sets up properly.
- These cheesecake bars are delicious with a drizzle of caramel sauce. Once the bars have chilled drizzle the tops with a caramel ice cream topping or cooled homemade caramel sauce.
