Apple Cheesecake Streusel Bars

These Apple Streusel Cheesecake Bars have a buttery shortbread crust, creamy cheesecake filling and are topped with sweet cinnamon apples and a crunchy oat topping. A delicious decadent dessert that will cure any sweet craving.

Ingredients

Crust

Cheesecake

Streusel

Apples

  • cups peeled and diced small apples, about 4-5 small/medium apples
  • 2 tablespoons granulated sugar
  • ½ teaspoon cinnamon

Caramel

  • ¼ cup caramel sauce, store bought or homemade

Instructions

Crust

  • Preheat the oven to 350°F and gather all your ingredients. Line a 9x13 baking pan with parchment paper leaving an inch overhang on the long side or grease well with non-stick cooking spray.
  • In a large bowl combine the all purpose flour, brown sugar, and ½ teaspoon of cinnamon. Cut in 1 cup of salted butter until the crust resembles course crumbs.
  • Press the crust into an even layer in the prepared baking pan. Bake the crust for 15 minutes or until lightly browned.

Cheesecake

  • In a stand mixer fitted with the paddle attachment cream together the softened cream cheese and granulated sugar until creamy.
  • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla and set cheesecake aside.

Streusel

  • Combine the all purpose flour, brown sugar and rolled oats in a large mixing bowl. Cut in the softened butter with a pastry blender or your hands until it resembles course crumbs. Then set streusel aside.

Apples

  • Next, peel and dice the apples into small pieces. To the apples add the granulated sugar and cinnamon. Stir them together well and set aside.

Assemble and Bake

  • Evenly spread the cheesecake layer over the warm crust.
  • Then evenly spoon the apples over the cheesecake layer.
  • Sprinkle the oat topping evenly over the apples.
  • Bake the cheesecake bars for 40-45 minutes until the cheesecake layer is fully set (test with toothpick) and the oat topping is a deep golden brown.
  • Let the bars cool for at least 30 minutes then chill the bars in fridge for 2-4 hours.
  • Drizzle bars with caramel topping, if desired.
  • Slice bars and serve!!
