Nothing is as comforting than a warm bowl of hearty soup, especially on gloomy, chilly days. Plus, pizza is always comforting no matter what the weather looks like or no matter how we are all feeling. We could eat pizza almost Every. Single. Day. in this house! So, it only makes sense that this Pizza Soup would be just as comforting. And believe me it is!
How to make comforting Pizza Soup
Ingredients for Pizza Soup
- 1 pound mild Italian Sausage
- 1 onion, diced
- 1 celery stick, diced
- 1 green pepper, diced
- 2 garlic cloves, minced
- 4 cups beef broth
- 14-½ oz can diced tomatoes with basil, garlic & oregano
- 4 oz can mushrooms, drained
- 1 teaspoon dried oregano
- 1 bay leaf
- pinch red chili pepper flakes
- salt and pepper to taste
- 2 cups cooked rotini pasta or tri-color pasta
- optional toppings, grated Parmesan cheese, shredded mozzarella cheese, fresh parsley
Make the Soup
First, you will need to cook the pasta according to package directions. While the water is coming to a boil, start on the soup. Brown the Italian Sausage in a large dutch oven or soup pot over medium heat until fully cooked through. Drain all the grease except 2 tablespoons.
Now, add the onion, celery and green pepper and saute with the sausage until the onions are translucent. Add the garlic and cook another minute or two until the garlic is fragrant. I love the smell of garlic!
Next, stir in the beef broth, diced tomatoes with juice, mushrooms, oregano, bay leaf, chili flakes, salt and pepper. Let the soup simmer for 10-15 minutes. Taste the soup to see if it needs some more salt. When it tastes of perfection, remove from heat and stir in pasta.
This next step is optional, but delicious. When serving the soup, top it with some grated Parmesan cheese or shredded mozzarella and fresh parsley.

Pizza Soup
Ingredients
- 1 pound Italian Sausage

- 4 oz can mushrooms, drained
- 1 teaspoon dried oregano
- 1 bay leaf
- pinch red chili pepper flakes
- salt and pepper to taste
- 2 cups cooked rotini pasta or tri-color pasta
- grated Parmesan cheese, shredded mozzarella, fresh parsley, optional toppings
Instructions
- Cook pasta according to package directions.
- In a large dutch oven or soup pot, brown the Italian sausage over medium heat, until fully cooked. Drain any grease, leaving about 2 tablespoons in the pot.
- Add the onion, celery and green pepper. Saute with sausage until onions are translucent.
- Add the garlic and cook 1-2 minutes until garlic is super fragrant.
- Stir in the beef broth, diced tomatoes, mushrooms, oregano, bay leaf, chili flakes, salt and pepper.
- Reduce the heat to low and simmer 10-15 minutes. Taste and see if it needs more salt.
- Remove the soup from the heat source and stir in the pasta. Or place pasta in bowl and top with soup.
- Top the soup with grated Parmesan cheese, shredded mozzarella or fresh parsley.
