    Ham and Cheese Oven Omelet

    This Oven Omelet with Ham and Cheese is an easy homemade breakfast that is perfect for feeding the whole family. This baked omelet is packed with savory ham and melty cheese, then sliced and served straight from the pan. A family friendly recipe that keeps mornings simple while still putting a warm breakfast on the table.

    I have been cooking breakfasts like this for years, both in restaurant kitchens and at home for my own family. Recipes like this baked omelet are some of my favorites because they are reliable, practical, and perfect for busy mornings. I have tested this recipe many times to get the texture just right so it bakes up tender and slices easily. It is the kind of breakfast my family happily digs into, which makes it a regular on our table.

    Oven Omelet Recipe Ingredients

    • Large Eggs
    • Milk
    • Diced Ham
    • Cheddar Cheese
    • Swiss Cheese
    • Dried Chives
    • Black Pepper

    Substitution Suggestions

    • Milk: I like to use 2% cows milk because it is always in our fridge. You can use any type of milk you drink. For a more richer flavor you can use heavy cream or half and half. Water is also a good substitute. Traditionally, an omelet doesn't usually have any liquid added but I really like the texture a little bit of milk adds.
    • Ham: I normally use leftover ham that I have stashed in the freezer. You can swap the ham out with your favorite breakfast meat or a bunch of diced veggies. This is very customizable.
    • Cheese: I like the combination of cheddar and Swiss cheeses, but you can use any cheese you have on hand or prefer. Co-jack, Monterey Jack, Pepper Jack or Gruyere are all delicious options.
    • Dried Chives: Dried herbs and spices are not given enough credit. They can add so much extra flavor. If you don't have any chives you can use some dried onion flakes or ¼ teaspoon of onion powder. You can always use fresh too!

    How To Make Oven Omelet with Ham and Cheese

    1. First, preheat the oven to 400°F and grease a 9 inch pie plate or a 9 x 9 baking dish. Now, gather all your ingredients!
    2. In a large bowl, whisk together the eggs and milk until completely smooth and a little frothy.

    1. Next, stir in diced ham, 1 cup of the shredded cheeses, dried chives and black pepper. Stir well.
    2. Now pour the mixture into the prepared baking dish and sprinkle the rest of the shredded cheese on top, which results in a perfect layer of crispy cheese after being baked.

    1. Bake the omelet in preheated oven for 35-45 minutes until the eggs are fully cooked through and the top has turned golden brown. I like to use a butter knife inserted in the center of the omelet to test if the eggs are cooked through. Works like a charm!
    2. Let sit for 5 minutes before slicing and serving.

    This ham and cheese oven omelet is delicious any time of day. We most often serve it for breakfast or brunch, and I love pairing it with fresh fruit, toast or a few homemade baked goods to round out the meal. Here are some of our favorites:

    Storing

    Storing: Store leftover oven omelet (if there is any) in an airtight container in the fridge for up to 4 days.

    Freezing: Place pieces of the baked eggs in a freezer safe airtight container or freezer bag. Label, date and freeze for up to 4 months. Thaw overnight in the fridge.

    Reheating: Reheat the egg bake in a low oven covered with foil or in the microwave until warmed through.

    Heather's Favorite Tools for this Recipe

    • I love Pyrex baking dishes and CorningWare baking dishes.
    • These glass measuring cups from Pyrex are my favorite to use when measuring liquids!
    • A simple box grater is perfect for shredding your own cheese.
    • This deep skillet or cast iron skillet are great for sautéing veggies or meat, if needed.

    Tips for Oven Omelet Recipe

    • Shred your own cheese. It will melt easier and create a better texture. The pre-shredded cheese has an anti-caking agent on it, which makes it not melt well and leave a grainy texture.
    • Whisk those eggs well! You want the oven omelet to come out fluffy so the eggs need to beaten until all the whites and yolks are smooth.
    • Make it ahead. You can prep all the ingredients and store them in the fridge and assemble the dish before baking. Or you can assemble the oven omelet the night before and store covered in the fridge. Let the eggs sit at room temperature while the oven preheats and then bake as recipe says.
    • Double the recipe! Need to make breakfast for a larger crowd? Double the recipe and bake in a 9x13 dish!

    Ingredients

    • 8 large eggs
    • ½ cup milk, any type
    • 1½ cups diced ham
    • ¾ cup shredded cheddar cheese
    • ¾ cup shredded Swiss cheese
    • 1 tablespoon dried chives
    • ½ teaspoon black pepper

    Instructions

    • Preheat oven to 400°F and grease a 9 in pie dish or 9x9 baking dish with nonstick cooking spray.
    • In a large bowl whisk together the eggs and milk until smooth and frothy.
    • Stir in diced ham, 1 cup of cheese, chives and black pepper.
    • Pour egg mix into prepared dish and sprinkle top with the remaining ½ cup of cheese.
    • Bake for 35-45 minutes until edges are golden brown, eggs are fully cooked and a butter knife inserted in center comes out clean.
    • Let rest 5 minutes before slicing and serving.
