Oatmeal Fudge Bars Ingredients
- Salted Butter
- White Sugar
- Light Brown Sugar
- Eggs
- Pure Vanilla Extract
- Unbleached All Purpose Flour
- Baking Powder
- Salt
- Old Fashioned Oats
- Semi-Sweet Chocolate Chips
- Sweetened Condensed Milk
Substitution Suggestions:
- Salted Butter: Unsalted butter can be used. I suggest adding an additional ½ teaspoon of salt to the cookie dough.
- Pure Vanilla Extract: Pure extract is always best. It will provide a more natural flavor rather than the imitation vanilla extract that can leave an off putting after taste in your baked goods.
- Unbleached All Purpose Flour: If you like you can use white whole wheat flour, whole wheat flour or a blend of both.
- Old Fashioned Oats: Rolled oats is what gives this dough the texture it needs to be chewy. I don't recommend using quick oats for this recipe.
- Semi-Sweet Chocolate Chips: You can use dark chocolate chips or milk chocolate chips. Whichever you prefer.

How to Make Oatmeal Fudge Bars
- In a stand mixer with paddle attachment or with hand mixer and large bowl, cream butter, sugar and brown sugar together until light and fluffy.
- Then, add vanilla extract and eggs one at a time beating well after each egg.
- Add the dry ingredients: all purpose flour, baking powder, and salt and mix just until combined.
- Lastly, add the rolled oats 1 cup at a time, mixing slowly after each addition.
- In a 9x13 baking dish greased or lined with parchment paper, add ⅔ of the cookie dough and pat it out in an even layer.
- In a microwave-safe bowl, combine semisweet chocolate chips, sweetened condensed milk, 2 tablespoons butter and a pinch of salt.
- Microwave for 1 minute, stir. If needed microwave an additional 15 seconds until the chocolate mixture is completely melted.
- Stir in the vanilla extract.
- Immediately spread the fudge filling evenly over the cookie base.
- Then take pinches of the remaining oatmeal mixture and lay it on top of the chocolate letting some of the fudge peek through.
- Bake in a 350°F preheated oven for 30-35 minutes until the cookie dough is golden brown along the edges and no longer looks glossy on top.
- Let bars cool completely, then slice, serve and enjoy!

Storing Fudgy Oat Bars
Store these bars in an airtight container at room temperature. They'll stay fresh and chewy for 4-5 days.
These fudgy oat bars can also be frozen. Let the bars cool completely and then add them to a freezer safe air tight container between layers of wax paper. Thaw at room temperature for a few hours before enjoying.
Tips for Fudgy Oatmeal Bars
- Line the baking dish with parchment paper leaving an inch overhang on the long edge so you can easily lift the bars out of the dish once cooled.
- Spray your hands with cooking spray before patting dough into baking dish. This will prevent the dough from sticking to you and creating a mess.
- Don't microwave the chocolate for too long or it will seize. Use 15 second intervals and stir well in between.
- For best results do not overbake the bars. The base needs to have golden brown edges and the top cookie will be golden brown and no longer look glossy.
- Let the bars cool completely before slicing. The filling needs time to cool and set so the bars stay in tack when sliced.
