    Banana Pancakes with Fried Cinnamon Bananas

    Fluffy banana filled pancakes topped with fried cinnamon bananas is an easy and indulgent breakfast that will put anybody in a good mood!

    Breakfast food is a favorite at our house. We make a big family breakfast every Sunday morning. However, we just don't eat breakfast for breakfast. We eat breakfast for dinner a lot! These pancakes come together in a snap and the fried bananas are simple to make. This recipe would make a great breakfast for dinner meal! It already has at our house!

    How to Make Banana Pancakes with Fried Cinnamon Bananas

    Ingredients for Banana Pancakes

    • 2 cups unbleached all purpose flour
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 2 tablespoons sugar
    • 1-¾ cups milk
    • 2 large eggs
    • 1 teaspoon pure vanilla extract
    • 2 tablespoons salted butter, melted
    • 2 bananas, mashed

    Ingredients for Fried Cinnamon Bananas

    • 2 tablespoons salted  butter
    • 2 tablespoons pure maple syrup
    • 1 teaspoon cinnamon
    • 2 bananas, sliced

    Let's Make Breakfast!

    We'll make the pancake batter first. While that rests, we'll heat up the griddle. While we are flipping cakes, we'll make the fried cinnamon bananas. Breakfast (or dinner) will be ready in about 20 minutes!

    For the pancake batter: combine the flour, baking powder, baking soda, salt and sugar in a large mixing bowl. In a small bowl, whisk together the milk, eggs, and vanilla. Add the wet ingredients to the dry and gently whisk together. Then add the butter, followed by the bananas and gently stir together. Now let the batter rest while you prepare and heat your griddle. Letting the batter rest is important so the baking powder and baking soda can do its magic, which is creating fluffy pancakes.

    You can use a non-stick griddle or a frying pan and butter. I prefer the griddle. I heat the griddle to 350°. While the griddle is warming up, I also turn my oven on to 170° so the pancakes will stay warm in between batches.

    Using a ladle or ¼ cup measuring cup, pour the pancake batter onto the preheated griddle. Let the cakes cook 2-3 minutes or until bubbles are forming and slightly popping. Flip the cakes and cook another 1-2 minutes until golden brown. Place the finished pancakes on a baking sheet and place in warm oven until ready to serve.

    For the fried cinnamon bananas: in a saute pan melt butter and syrup together over medium-low heat until it starts to bubble. Next, add the bananas and cinnamon and stir into the sauce. Cook the bananas until the sauce is slightly thickened to a syrup consistency and the bananas are soft.

    Finally, serve the fried cinnamon bananas over the warm banana pancakes with some additional warm maple syrup!

    Banana Pancakes with Fried Cinnamon Bananas

    For the Pancakes

    • 2 tablespoons sugar

    • 2 bananas, mashed

    Fried Cinnamon Bananas

    • 2 tablespoons salted butter
    • 2 tablespoons pure maple syrup
    • 2 bananas, sliced
    • 1 teaspoon cinnamon

    Instructions

    Make the Pancakes

    • In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar.
    • In a small bowl, whisk together the milk, eggs, and vanilla.
    • Add the wet ingredients to the dry and gently whisk together.
    • Add the butter and bananas, whisk just until combined.
    • Let the batter rest, while the griddle and oven preheat. Heat griddle to 350° and heat oven to 170°.
    • Using a ladle or ¼ cup pour the batter on the griddle. Cook the pancakes 2-3 minutes or until bubbles are forming and slightly popping on top of the batter.
    • Flip the pancakes and cook 1-2 minutes until golden brown. Remove finished pancakes and place on a baking sheet. Put the baking sheet in the oven to keep the pancakes warm between batches.
    • Top the pancakes with the fried cinnamon bananas and warm maple syrup. Recipe continues.

    For the Fried Cinnamon Pancakes

    • Melt together the butter and syrup over medium-low heat until it starts to bubble.
    • Add the bananas and cinnamon and cook until the sauce is slightly thickened and the bananas are soft.
    • Serve over warm Banana Pancakes.
