    Tator Tot Egg Bake

    This easy Tator Tot Egg Bake is super simple to assemble and is great for a fancy family breakfast or brunch! Plus, it can be assembled the night before so you can enjoy your coffee while breakfast goes straight in the oven!

    Every Sunday we have a big family breakfast. Each week we change it up. I prefer french toast and pancakes along with my oldest, but the rest of the family are egg lovers when it comes to breakfast. Instead of making fried eggs and toast all the time, I try to change things up. Sometimes not even on purpose!

    I make a delicious Easy Egg Bake that everyone loves. I went to make it one Sunday and I was out of hash browns, and definitely was not feeling ambitious enough to make my own that morning. Staring me right in the face however, was a bag of tator tots. Hmmmm... Why not? They are potatoes after all! And that my friends is how I developed this recipe! It's comforting, cheesy, and super duper delicious!

    How To Make Tator Tot Egg Bake

    Ingredients Needed

    • 32 oz bag frozen tator tots
    • 12 large eggs
    • 1-½ cups milk
    • 2 cups diced ham
    • 2 cups shredded co-jack cheese
    • salt and pepper to taste

    Lets Make Breakfast

    Preheat the oven to 350° and grease a 9x13 baking dish.

    To make the egg bake you will first spread the tator tots on the bottom of the greased dish and then sprinkle with 1 cup of the cheese followed by the diced ham and some salt and pepper.

    Next, in a mixing bowl, whisk together the eggs and milk. Pour the mixture evenly over the tator tots and ham.

    Lastly, sprinkle with the remaining cheese and bake for 50-60 minutes until a butter knife inserted in the center comes out clean.

    Let cool for 10 minutes before slicing and serving. Enjoy!

    To Make Ahead

    To make this breakfast ahead of time, simply assemble the egg bake according to directions, cover it and refrigerate until ready to bake. Pull the dish out to sit at room temperature for 10-15 minutes before baking.
