Tator Tot Egg Bake

This easy Tator Tot Egg Bake is super simple to assemble and is great for a fancy family breakfast or brunch! Plus, it can be assembled the night before so you can enjoy your coffee while breakfast goes straight in the oven!

Ingredients

  • 32 oz bag frozen tator tots
  • 12 eggs
  • 1-½ cups milk
  • 2 cups diced ham
  • 2 cups shredded co jack cheese
  • salt and pepper to taste

Instructions

  • Preheat oven to 350° and grease a 9x13 baking dish.
  • Spread the tator tots evenly in the baking dish.
  • Sprinkle one cup of cheese over the tator tots, followed by the diced ham and some salt and pepper.
  • Whisk together the eggs and milk and pour over the tator tots and ham.
  • Sprinkle with the remaining cheese.
  • Bake for 50-60 minutes or until a butter knife inserted in the center comes out clean.
  • Let cool for 10 minutes before slicing and serving.

Notes

To make this breakfast ahead of time, simply assemble the egg bake according to directions, cover it and refrigerate until ready to bake. Pull the dish out to sit at room temperature for 10-15 minutes before baking.
