    Oatmeal Fruit Bars

    Sweet oatmeal bars sandwiching your favorite fruity jam are what these Oatmeal Fruit Bars are all about! Perfect little treat or sweet snack to cure your sweet tooth cravings.

    Have some jam that needs to be used up? Or just want a nummy sweet treat? These Oatmeal Fruit Bars are sure to satisfy! Bursting with fruity sweet flavors all sandwiched between a chewy, buttery, sweet oatmeal crust. Honestly... what's not to love about all that?!

    Oatmeal Fruit Bars are so simple to make too! The oatmeal crust is used for the top and bottom layers, and you can use any type of jam, jelly or preserves that you love. I am a strawberry jam lover. I always have an abundant amount in pantry to use throughout the year after strawberry picking has ended. It's my go to for this bar recipe.     Oatmeal Fruit Bars

    Lets get down to how we make these sweet thaaaangs!

    How to make Oatmeal Fruit Bars

    Ingredients

    • 3 cups rolled oats
    • 1-½ cups whole wheat flour
    • 1 cup packed brown sugar
    • 2 teaspoons baking powder
    • 1 cup chilled salted butter
    • 16 oz (about 2 cups) of your favorite fruit jam

    Instructions

    1. Preheat oven to 350 degrees.
    2. Grease a 9x13 baking dish or two 8x8 baking dishes.
    3. In a large mixing bowl, combine the rolled oats, flour, brown sugar, and baking powder.
    4. Cut the butter into ¼ in cubes and add to the oat mix.
    5. Using a pastry blender or your fingers, blend the mix with the butter until everything is large course crumbs.
    6. Pat half of the mixture firmly into the bottom of the prepared baking dish or dishes.
    7. Spoon the jam on top and spread into an even layer.
    8. Sprinkle the other half of the oat mix on top of the jam and gently but firmly pat the oat mix down.
    9. Bake for 45-50 minutes until the oats are nice deep golden brown.

    If making 2 dishes, you can use 2 different flavors of jams!

    Serve these sweet little babies for breakfast, dessert or an after school snack. Serve them warm, chilled or at room temperature. All my kiddos like all of the above. If you like oats and fruit try some of these other recipes of mine!

    • 1 cup packed brown sugar
    • 2 teaspoons baking powder
    • 1 cup salted butter, chilled
    • 16 oz fruit jam, (about 2 cups)

    Instructions

    • Preheat oven to 350 degrees.
    • Grease a 9x13 baking dish or two 8x8 baking dishes.
    • In a large mixing bowl, combine oats, flour, brown sugar, and baking powder.
    • Cut the butter into 1/ 4 inch cubes and add to oat mix.
    • Using a pastry blender or your fingers, blend the butter and oat mix together until it is large course crumbs.
    • Firmly pat half of the oat mix into prepared dish or dishes.
    • Spoon the jam on the crust and spread out evenly.
    • Sprinkle the rest of the oat mix over the jam and gently but firmly pat it down.
    • Bake for 45 minutes until the oats are a deep golden brown.
