Preheat a griddle to 350°F or a frying pan on medium-low heat with some butter or neutral oil.
In a small bowl, stir together the sliced strawberries and tablespoon sugar. Set aside.
In another small bowl, mix together the cream cheese and vanilla extract until smooth, set aside.
In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
Spread the cream cheese mixture over every slice of bread, about a tablespoon on each piece.
Top 6 slices of bread evenly with the sliced strawberries trying to keep them in a single layer.
Top the strawberry covered slices with the remaining bread slices.
Dunk the stuffed bread into the egg custard, making sure to coat the entire sandwich.
Place on griddle or in fry pan and cook until golden brown, about 2-3 minutes.
Flip the stuffed french toast and cook another 2-3 minutes until golden brown and the egg custard is fully cooked.
Serve with warm maple syrup and extra strawberries! Enjoy!
