Sheet Pan Chicken and Potatoes

One Pan Chicken and Potatoes is an easy sheet pan dinner made with tender seasoned chicken, crispy potatoes and simple ingredients. A family friendly meal with minimal prep, no fuss cleanup, and delicious results every time.

Ingredients

  • 2 pounds chicken thighs (about 6 thighs), bone in, skin on and patted dry
  • 2 pounds yukon gold potatoes, scrubbed and diced into 1 inch cubes
  • ½ small yellow onion, roughly chopped
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon parsley, dried
  • 1 teaspoon salt
  • ¼ teaspoon pepper

Chicken Seasoning

  • olive oil spray
  • 1 teaspoon thyme, dried
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Preheat oven to 400°F and line a large rimmed sheet pan (18x13) with parchment paper or foil, or grease with nonstick cooking spray.
  • Add diced potatoes and onions to large zip top bag or bowl and add olive oil, minced garlic, parsley, salt and pepper. Toss it to coat the potatoes evenly.
  • Spread the potatoes out in a single layer on prepared sheet pan.
  • Nestle the chicken thighs skin side up in the potatoes.
  • Spray some olive oil on tops of the chicken thighs.
  • Combine thyme, paprika, salt and pepper in a small bowl. Sprinkle the seasoning evenly over the chicken.
  • Bake for 45-60 minutes until the chicken reaches at least 165°F internally and the potatoes are fork tender.
  • Let chicken rest for 10 minutes.
