1 pound ground turkey ½ cup shredded carrot , about 1 medium carrot ¼ cup soy sauce ¼ cup honey 1 tablespoon sesame oil 1 tablespoon rice vinegar 2 teaspoons minced garlic ¼ teaspoon ground ginger ⅛ teaspoon red pepper flakes 1 tablespoon corn starch 1 tablespoon water
In a small bowl, whisk the sauce ingredients together: soy sauce, honey, sesame oil, rice vinegar, minced garlic, ground ginger and red pepper flakes.
In a large skillet, brown the ground turkey over medium heat until no longer pink.
Add the shredded carrots to the turkey and cook for 1-2 minutes until just slightly softened.
Stir in the teriyaki sauce and bring mixture to a low boil.
Whisk together the corn starch and water to make a slurry.
Add the slurry to the turkey and stir it in well. Gently stir until the sauce has thickened.
Remove turkey from heat and serve over cooked rice or in lettuce cups.
