Easy Egg Roll in a Bowl

This Easy Egg Roll in a Bowl is a quick skillet meal that is full of all your favorite egg roll flavors. These no fuss egg roll bowls are perfect for busy weeknights. For sure to be a new family favorite meal!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground pork
  • teaspoons ground ginger
  • 2 tablespoons minced garlic
  • 1 cup soy sauce, low sodium
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • tablespoons cornstarch
  • 10 oz bag tri-color slaw mix
  • fried wonton strips, sliced green onions, sesame seeds, for topping

Instructions

  • In a large deep skillet, heat olive oil over medium heat. Add the ground pork, crumble and cook until no longer pink.
  • Add the ground ginger and minced garlic, cook for a minute until the garlic is fragrant.
  • Stir in the slaw mix and cook for 2-3 minutes until slightly wilted.
  • While the vegetables are cooking, in a medium bowl combine: soy sauce, honey, sesame oil, rice vinegar and cornstarch. Whisk until well combined.
  • Add the sauce mix to the skillet and stir to incorporate it all. Heat for 2-3 minutes until sauce is thickened.
  • Serve over rice and garnish with fried wonton strips, sliced green onions and sesame seeds.
