Chili Mac with Leftover Chili is a quick and easy one pot dinner the whole family will love. It transforms leftover chili into a rich, cheesy pasta skillet that's full of comforting flavor and ready in less than 30 minutes.
Over medium-high heat, bring the water to a boil, stir in salt, cover and reduce heat to low.
Simmer for 5-6 minutes until most of the water is absorbed and the pasta is almost al dente with a slight bite. (There should still be a little bit of water left in the pan, and the pasta will continue to cook while you finish the dish.)
Add the leftover chili to the macaroni and increase the heat to medium. Bring the chili mac to a low bubble.
Once bubbling, stir in the shredded cheese one handful at a time until it is melted and repeat until all the cheese is added and melted.
Reduce heat to low and simmer for 5 minutes, stirring it a few times.
