Creamy Chicken Orzo

Creamy Chicken Orzo is an easy one pot meal perfect for busy weeknights. This comforting family dinner is creamy, flavorful, and ready within 30 minutes.

Ingredients

  • 3 tablespoons olive oil
  • pounds chicken breast, boneless and skinless, cubed into 1" pieces
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 small onion, diced
  • 8 ounces sliced button mushrooms
  • 1 tablespoon minced garlic
  • 1 cup orzo
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 2 cups chicken broth
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese

Instructions

  • Heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Then add the diced chicken and season it with 1 teaspoon salt and ½ teaspoon black pepper.
  • Cook for 4-5 minutes until the chicken is cooked through, turning it a few times. Remove chicken to plate and set aside.
  • Now add the remaining oil to the same skillet along with the onions, mushrooms and minced garlic. Cook for 4-5 minutes until the onions and mushrooms are soft.
  • Then stir in orzo, parsley, thyme, remaining salt and black pepper, and chicken broth. Scrape the bottom of the pan to release any bits of flavor.
  • Bring the mixture to a boil, cover and reduce heat to medium-low. Cook until the orzo is al dente, about 8-10 minutes, and stirring occasionally.
  • Once the pasta is al dente, stir in the heavy cream and Parmesan cheese until fully combined.
  • Then stir the chicken back in and heat through, about 1-2 minutes.
  • Remove skillet from heat and let stand 5 minutes.
  • Serve and enjoy!
