Creamy Chicken Orzo is an easy one pot meal perfect for busy weeknights. This comforting family dinner is creamy, flavorful, and ready within 30 minutes.
Heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Then add the diced chicken and season it with 1 teaspoon salt and ½ teaspoon black pepper.
Cook for 4-5 minutes until the chicken is cooked through, turning it a few times. Remove chicken to plate and set aside.
Now add the remaining oil to the same skillet along with the onions, mushrooms and minced garlic. Cook for 4-5 minutes until the onions and mushrooms are soft.
Then stir in orzo, parsley, thyme, remaining salt and black pepper, and chicken broth. Scrape the bottom of the pan to release any bits of flavor.
Bring the mixture to a boil, cover and reduce heat to medium-low. Cook until the orzo is al dente, about 8-10 minutes, and stirring occasionally.
Once the pasta is al dente, stir in the heavy cream and Parmesan cheese until fully combined.
Then stir the chicken back in and heat through, about 1-2 minutes.
