Ingredients

  • 3 tablespoons olive oil
  • pounds chicken breast, boneless and skinless, cut into 1" pieces
  • 1 small onion, diced
  • 1 tablespoon minced garlic, about 3 cloves
  • 1 cup orzo
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded parmesan cheese

Instructions

  • Heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Then add the diced chicken and season it with a little salt and pepper.
  • Cook for 4-5 minutes until the chicken is cooked through, turning it a few times. Remove chicken to a plate and set aside.
  • Add the remaining olive oil to the skillet along with the diced onions and minced garlic. Cook for 4-5 minutes until the onions are soft and translucent.
  • Stir in orzo, garlic powder, onion powder, parsley, saltblack pepper and chicken broth. Scrape the bottom of the pan to release any bits of flavor.
  • Bring the mixture to a boil, then cover and reduce heat to medium-low. Cook until the orzo is half done, about 5-6 minutes, and stirring occasionally.
  • Remove lid and stir in the frozen broccoli. Cooking uncovered for 3-5 minutes until the orzo is al dente and the broccoli has softened.
  • Once the pasta is al dente, stir in the heavy cream and heat through.
  • Stir in the cheeses one handful at a time and stirring until fully melted and combined.
  • Then stir the chicken back in and heat through, about 1-2 minutes.
  • Remove skillet from heat and let stand 5 minutes.
