Ingredients

  • 1 9 inch pie crust, baked and cooled, my recipe is linked above in the post

Chocolate Pudding Filling

  • 1 cup sugar
  • ½ cup corn starch
  • ½ cup unsweetened cocoa powder
  • 4 cups milk, I prefer 2% cows milk
  • ¼ cup milk chocolate chips
  • 2 tablespoons salted butter
  • 1 tablespoon pure vanilla extract

Whipped Cream

Instructions

Chocolate Pudding Filling

  • In a saucepan, whisk together sugar, corn starch, cocoa powder and milk.
  • Heat mix over medium heat and bring to a boil, takes about 10 minutes. Boil for 1 minute.
  • Test pudding with a metal spoon. Pudding should coat spoon without showing through the pudding.
  • Remove pudding from heat and add chocolate chips, butter and vanilla. Whisk until smooth.
  • Pour the pudding filling into the pie crust. Place a piece of plastic wrap on the surface of the pudding and place pie in fridge to chill.

Whipped Cream

  • Beat the cream in a stand mixer with the whisk attachment or with a hand beater until soft peaks form.
  • Add powdered sugar and vanilla and beat until the cream firms up just a bit. You want creamy by firm peaks.
  • Remove the plastic wrap from the pie and spread the whipped cream over the filling.
  • Sprinkle with extra chocolate chips, optional.
  • Chill the pie for 2-4 hours before serving.
  • Store pie in fridge.
