Chickpea Peanut Butter Bites

Chickpea Peanut Butter Bites are perfect little on the go snacks that are satisfying and delicious! Sweet bites that are made with healthy ingredients makes these a great guilt free snack!

Ingredients

  • 15 oz can chickpeas, drained and rinsed, (or called garbanzo beans)
  • ½ cup creamy natural peanut butter
  • ¼ cup honey
  • ½ cup vanilla protein powder
  • 1 teaspoon pure vanilla extract
  • ¼ cup semi-sweet or dark mini chocolate chips

Instructions

  • Add chickpeas to food processor and process until they start to make a paste.
  • Add peanut butter, honey, vanilla, and protein powder. Pulse until the mix is smooth and starts to form a ball, it will be thick.
  • Place the mix in a bowl and stir in the chocolate chips.
  • Use a medium cookie scoop or rounded tablespoon to portion bites and then roll into balls. Place balls on a parchment lined sheet pan.
  • Place sheet pan in fridge to chill for 30 minutes.
  • Place in air tight container or zip top bag and store in the fridge.

Notes

To freeze: place sheet pan in freezer and freeze bites for a couple hours. Place bites in a freezer safe air tight container or zip top bag. Don't forget to label. 
To thaw: let thaw about 10-15 minutes before eating or take out the night before and thaw in fridge.
