In a small bowl, stir together the strawberries and sugar. Set aside.
In another small bowl, mix together the cream cheese and vanilla until smooth, set aside.
In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and pinch salt.
Spread the cream cheese mix over every slice of bread.
Top 6 slices of bread evenly with the strawberries.
Top the strawberry covered slices with the remaining bread slices.
Preheat a griddle to 350° or a frying pan on medium-low heat with some butter.
Dunk the stuffed bread into the egg custard, making sure to coat the entire sandwich.
Place on griddle or in fry pan and cook until golden brown, about 2-3 minutes.
Flip the stuffed french toast and cook another 2-3 minutes until golden brown and the egg custard is fully cooked.
Serve with warm maple syrup and extra strawberries! Enjoy!
