Confetti Sugar Cookies

These Confetti Sugar Cookies are a simple drop sugar cookie that is filled with sprinkles. They require no chilling and can be made and baked right away, making them great for any occasion.

  • Preheat oven to 350°F and line 2 baking sheets with parchment paper.
  • In a stand mixer fitted with a paddle attachment or using a hand mixer, cream together butter and sugar until light and fluffy, about 2 minutes.
  • Add egg and vanilla extract. Beat together until creamy and scraping the sides of the bowl.
  • Add the baking powder, baking soda and all purpose flour. Mix together on low speed until everything is just combined.
  • Add sprinkles and mix on low or fold in with a spatula until evenly incorporated.
  • Drop on baking sheet using a tablespoon cookie scoop or measuring spoon, placing cookies 2 inches apart. I get 13 cookies on each baking sheet.
  • Bake for 10-12 minutes.
  • Let cool for 2 minutes only on pan then remove to wire rack to cool completely.
