Confetti Sugar Cookies
These Confetti Sugar Cookies are a simple drop sugar cookie that is filled with sprinkles. They require no chilling and can be made and baked right away, making them great for any occasion.

Preheat oven to 350°F and line 2 baking sheets with parchment paper.
In a stand mixer fitted with a paddle attachment or using a hand mixer, cream together butter and sugar until light and fluffy, about 2 minutes.
Add egg and vanilla extract. Beat together until creamy and scraping the sides of the bowl.
Add the baking powder, baking soda and all purpose flour. Mix together on low speed until everything is just combined.
Add sprinkles and mix on low or fold in with a spatula until evenly incorporated.
Drop on baking sheet using a tablespoon cookie scoop or measuring spoon, placing cookies 2 inches apart. I get 13 cookies on each baking sheet.
Bake for 10-12 minutes.
Let cool for 2 minutes only on pan then remove to wire rack to cool completely.
