Applesauce Mini Muffins
Applesauce Mini Muffins are a delightful little muffin filled with apple flavor and topped with a sweet cinnamon sugar combo. An easy recipe that makes a perfect little snack, quick breakfast or tasty lunch item!

Preheat oven to 350 degrees.
Line a mini muffin pan with paper liners.
In a small bowl, combine the sugar and cinnamon for the topping.
In a stand mixer with the paddle attachment or with hand beaters, cream together the butter and sugar until light and fluffy.
Add in egg and vanilla, mix well.
Add applesauce and mix just until combined.
Add flour, cinnamon, baking soda, baking powder and mix on low just until combined. Be careful not to over mix.
Scoop batter into muffin pan filling about ¾ full.
Sprinkle as much or as little of the cinnamon sugar topping on the top of the batter.
Bake for 12-15 minutes or until a tooth pick comes out clean.
Let cool in pan for 3 minutes then remove to cool completely.
