  • Waffle Iron

  • Heat waffle iron, grease if needed.
  • In a large mixing bowl, whisk together the all purpose flour, cocoa powder, baking powder, sugar and salt.
  • In a medium bowl, whisk together the buttermilk, vanilla extract, and eggs until smooth.
  • Add the wet ingredients to the flour mixture and whisk it together a couple times.
  • Add the melted butter, whisk together until just fully incorporated being careful not to overmix.
  • Fold in the mini chocolate chips and let batter rest for a few minutes.
  • Using a ladle or a measuring cup, add waffle batter to hot waffle iron. Mine waffle maker takes about 1 cup of batter.
  • Cook the waffle according to the manufacturer's instructions. Most waffle makers will take about 3-4 minutes.
  • Remove waffle to a sheet pan with a cooling rack. You can keep the waffles warm in a very low oven until they are all made. Try not to stack the waffles too much because the steam can make the waffles soggy.
  • Serve with some butter, warm pure maple syrup, and extra chocolate chips.
