S'mores Brownies

These fudgy S'mores Brownies are the ultimate summer dessert. An easy graham cracker bottom, a homemade fudgy brownie layer, topped with marshmallows and milk chocolate pieces complete this over the top brownie recipe that everyone is going to go crazy for!

Ingredients

  • 9 sheets graham crackers, 1 package
  • 1 cup salted butter, melted
  • 2 cups sugar
  • ½ cup unsweetened cocoa powder
  • 4 large eggs
  • 1 tablespoon pure vanilla extract
  • cups unbleached all purpose flour
  • 1 cup milk chocolate chips, divided
  • 3 cups mini marshmallows
  • 1 Hershey's bar, broken into 12 pieces

Instructions

  • Preheat oven to 350°F and grease a 9x13 baking dish or line with parchment paper and grease paper.
  • Layer 7 ¼ graham cracker sheets in the bottom of prepared baking dish. Add the remaining graham crackers to a zip top bag and break into small pieces.
  • Melt butter over low heat on stove and add to large mixing bowl, or melt butter in large mixing bowl in microwave.
  • Add the cocoa powder to the melted butter and whisk until smooth.
  • Whisk in sugar until combined.
  • Add the eggs and vanilla extract, whisk until smooth and airy.
  • Stir in the all purpose flour with a spatula.
  • Fold in ¾ cup of the milk chocolate chips.
  • Add the brownie batter to the center of the baking dish over the graham crackers. Using an offset spatula, spread the brownie batter evenly out to the edges of the baking dish.
  • Bake for 30-32 minutes until the center is no longer jiggly and a toothpick inserted in the center has only a very little bit of batter on it. The brownies will be slightly underdone, but not completely raw in the middle.
  • Add the marshmallows in a single layer on top of the brownies. Then top with graham cracker pieces, remaining ¼ cup milk chocolate chips and then the Hershey's bar pieces.
  • Bake for another 6-7 minutes until the marshmallows have puffed and started to turn a light golden brown.
  • Let brownies cool for at least 30 minutes before slicing and serving.
