Healthy Basil Tuna Cakes

Healthy Basil Tuna Cakes are a quick, easy and budget-friendly dinner idea that is on the table in less than 15 minutes. You won't believe how delicious canned tuna is in these crispy cakes.

Ingredients

  • 20 oz canned tuna in water, drained, (4 cans)
  • 2 eggs, beaten
  • 10 saltine crackers, crushed
  • 1 Tablespoon dried onion flakes
  • 2 garlic cloves, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • In a mixing bowl, combine all ingredients together and mix well.
  • Form into 8 patties.
  • Heat a frying pan to medium heat and spray with olive oil.
  • Cook patties for 2-3 minutes until golden brown.
  • Spray the top of the patties with olive oil before turning over.
  • Turn patties over and cook another 2-3 minutes or until golden brown.
